This simple yet rewarding recipe for cashew nut butter offers a delightful alternative to store-bought spreads, showcasing the rich flavor and creamy texture of cashew nuts. Let’s dive into the world of nutty goodness and discover how easy it is to create your own velvety smooth spread. Here’s a recipe for how to make it.

Ingredients:

  • 2 cups of raw cashew nuts
  • Optional: pinch of salt, honey, or other sweeteners to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Spread the raw cashew nuts in a single layer on a baking sheet. Roast the cashews in the preheated oven for 8-10 minutes, or until they are lightly golden and fragrant. Be careful not to let them burn.
  2. Allow the roasted cashews to cool slightly before transferring them to a food processor. Process the cashews in the food processor for about 5-7 minutes, scraping down the sides as needed, until they transform into a smooth and creamy consistency. The cashews will go through stages of finely ground, then clumping together, and finally, becoming smooth and buttery.
  3. If desired, add a pinch of salt, honey, or any other sweeteners to taste, and continue processing until well incorporated.
  4. Transfer the freshly made cashew nut butter to a clean, airtight jar or container. Store it in the refrigerator for up to 2 weeks.
  5. Enjoy your homemade cashew nut butter spread on toast, drizzled over fruit, or used as a dip for veggies. Experiment with different flavor variations to suit your taste preferences.

Sometimes all you want is a chocolate fix. And if you’re in the mood for something sweet, most of the time a regular old bar of chocolate just doesn’t do the trick. So why not whip up a delicious chocolate mousse instead?

Most of the pre-made chocolate mousses you find in stores contain gelatin—meaning it’s not suitable for vegetarians. But there’s really no reason to miss out on something tasty, especially when it’s this easy to make at home.

It’s so simple you’ll have to restrain yourself from wanting to make it every day. With only four ingredients and a super straightforward method, even the most novice bakers can make a real crowd-pleaser dessert that tastes much more complicated than it really is.

Ingredients:

  • 100 grams of chocolate, whichever type and form you prefer
  • 2 level tablespoons instant coffee
  • 1 tablespoon liqueur
  • 3 large eggs, separated

Instructions:

  1. Break the chocolate into chunks and melt in a bowl over boiling water.
  2. While it’s melting, separate the eggs into whites and yolks.
  3. Once the chocolate is melted, remove the bowl from the heat and immediately drop in the egg yolks only (not the whites), beating until the mixture begins to thicken.
  4. In a separate cup, dissolve the coffee in a little hot water and pour it into the chocolate mixture.
  5. Stir in the liqueur.
  6. In another bowl, beat the egg whites until they reach just about soft peaks.
  7. Pour the chocolate mixture into the egg whites and whisk. Make sure not to over-whip so the mixture stays light and airy.
  8. Spoon into cups or dishes and chill in the fridge overnight.
  9. If you’re feeling fancy, top with strawberries or chocolate shavings.
  10. Enjoy!

Full disclaimer: we are not the biggest fans of radishes. The little root veggies are quite healthy, as a result of being rich in antioxidants and minerals like calcium and potassium. And while these help lower high blood pressure and reduce your risks for heart disease, it can’t be denied that radishes are rather bitter.

The signature sharpness comes from the various chemical compounds produced by these plants, including glucosinolate, myrosinase, and isothiocyanate. It is these enzymes that are found in both horseradish and wasabi as well.

If you can get past the bitterness, radishes make a rad addition (sorry, we had to) to salads, thanks to their crunchy texture and vibrant color. But according to the French, we’ve been eating these vegetables all wrong!

Radishes prepared with butter and sea salt are a classic snack in the European country and oh-so-easy to make. The creamy butter cuts through the sharp peppery flavor, but none of the crunch is lost.

Food blogger, Feel Good Foodie, has simply cut a wedge in the veggie and slathered softened butter inside, but if you’d like to elevate the dish, toast a slice of baguette, spread some butter, and place your radishes on top.

Bon appetite!

Charcuterie boards are an amazing idea for when you have friends over, go on a picnic or have a romantic movie night. They can be arranged in any way you want and feed just a few people or much more. One thing that will tie a charcuterie board together are crackers, and here’s how to choose the right ones.

You can fill a charcuterie board with cheeses, meats, fruits, nuts, and many other things. To balance out all the delicious flavors, you need something neutral—like some bread or crackers. You’ll never go wrong with plain-flavored crackers as they’ll let the other foods shine. But if you’re up for exploring different possibilities, here are a few options.

Crackers come in many different shapes and sizes, so even if you decide to use the plain ones it doesn’t mean your charcuterie board will be boring. For more flavor, try herb crackers, fig and olive crackers, oat crackers, or crackers with nuts. Make sure the crackers you pick to compliment the meats and cheeses you plan to serve. One way to do this is to try the combinations before serving. It’s a good idea to limit the cracker selection to two or three per board, so you can include a plain flavor and one or two more creative options.

Finally heading back to the office after the lockdown? With the dynamic world we live in now, rules and norms for the location of our work are changing all the time. Some people may be working in the office and some may have found a local space to sit and work remotely. Whatever you’re doing, if you’re among the many people who work away from home, you want something you can simply grab in the morning rush and enjoy later in the day.

One of the greatest snack options for work is overnight oats. It makes you feel good, it’s delicious, it energizes you for a workday at the office and it’s so easy to prepare. You can even make a few portions at the beginning of the week and leave them in the fridge until you need them. There is no right or wrong way to do it, and you should be creative with it! For this life hack, you’re going to need several nice jars with screw-on lids. Here’s how to make it.

Ingredients:

  • Large bag of oats
  • Milk/ Milk substitute
  • Assorted flavoring (Honey, Chia seeds, berries, bananas, strawberries, nuts, etc.)

Instructions:

  1. On Sunday, place five jars on the counter. Fill each one up about halfway with oats. Then pour milk. You can use any kind of milk or milk substitute you want. Pour around the same amount of milk as the oats.
  2. When it comes to flavoring, honey is a classic all-time favorite. You can leave it plain, or get creative. Once you’ve prepared five jars, leave them all in the fridge. The milk and flavors will make the oats soft and delicious. If you really want to upgrade them you can always add whipped cream, syrup of any kind and a fruit of your choice.
  3. Every day before leaving the door, take one, and enjoy!

Our metabolism works so much better when we take a little snack between the meals. Snacks are often associated with an unhealthy diet, but they can be good for you if you make the right pick. A piece of a fresh vegetable can be a great snack—and here are a few ideas with cornichons and pickles.

Cornichons

If you are a sour food lover, cornichons are probably your thing. These fermented baby cucumbers have a Gallic pedigree that once made them luxury food, but nowadays you can get a jar in any store.

It’s impossible to eat just one, and considering their size, consuming just a few cornichons in a single serving will be enough. They’re tasty when eaten on their own, but you can also serve them with other snacks.

Pickles

At this point, you’re probably wondering—aren’t cornichons and pickles the same thing? There is little difference, since pickles tend to be bigger and softer than cornichons.

They’re both extremely popular cucumber varieties that can be served as a snack. Just like cornichons, pickles can be eaten on their own, with other veggies, or used as an ingredient in many tasty snacks.

It’s always hard to find healthy late-night snacks that don’t go over the calorie limit. Check out our healthy late-night snack options below, give them a try and you won’t regret it!

Milk and Cereal

Late-night snacks should preferably be healthy and light as your metabolism really slows down during the night. If you thought that milk and cereal are only a breakfast thing – think again! Feel free to have them at night as well. According to scientists, your body will easily digest the carbs and help you sleep better.

Popcorn

Add a little spice to your popcorn, and your tasty treat is ready. Popcorn is a low-calorie snack and really easy to make at home, so you get to control the amount of salt and butter that goes into your corny snack.

Peanut Butter Jelly Sandwich

No doubt that PB&J sandwiches are a classic late-night snack. But make sure that you don’t overdo it, and stick to only one sandwich.

Banana and Almond Butter

This combo is so sweet that you’ll want to have it every single day. Opt for unsweetened almond butter and you will have the best snack ever. Both bananas and almond butter are rich in melatonin which will help you snooze, plus a number of healthy minerals.

Eggs

Eggs are so amazing that you can literally have them at any time of the day. They are rich in protein and so many other beneficial ingredients. Avoid fried eggs, and opt for boiled ones as your late-night snack.

If you’re craving a savory snack but would like to avoid store-bought chips, which are usually high in fat and calories, we have a homemade and delicious substitute for you to try. These parmesan thyme crisps can be spiced up with cayenne or any other spices that you like. Remember to store them in an airtight container, layered between waxed paper.

Ingredients:

  • 8 ounces freshly grated Parmesan cheese
  • 4 teaspoons fresh thyme leaves

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C). Line two baking sheets with parchment paper.
  2. Combine Parmesan cheese and thyme leaves in a bowl. Take two spoonfuls of the mixture and place it onto the lined baking sheet, spazing them two inches apart. Lightly press with your fingers to flatten them into circles 2 inches in diameter.
  3. Bake in the preheated oven until lightly browned and crisp, 8 to 10 minutes. Cool slightly on the baking sheets, about 2 minutes.
  4. Loosen the edges with a spatula and lift the chips off the parchment paper. Transfer to wire racks and let cool completely until firm, about 10 minutes.

Snacks are what gets us through our day. In between meals we just want something to chew on or momentarily satiate our stomachs. But it’s easy for snacks to turn into calorie bombs. Try one of these ideas for a quick, filling snack!

Hard-Boiled Egg

Hard-boiled eggs are easy to make and store, and are incredibly filling. One egg generally has 5 grams of fat and 6 grams of protein.

Kashi Blueberry Waffle with PB Fit Spread

One Kashi Blueberry Waffle contains 69 calories (2.5 grams of fat, 2 grams of protein). Mix half a tablespoon of PB Fit Peanut Butter Powder with water to add protein and sweetness to the waffle (17 calories).
