Some of the greatest items on the breakfast menu include classics such as pancakes, waffles, French toast, and breakfast muffins. All delicious, all incredibly glutinous. If you need to cut gluten from your diet, giving up your favorite morning foods can be depressing. But all is not lost – read this list of gluten-free alternatives and swaps so you can continue to indulge on those lazy weekend mornings.

Pancakes

Gluten-free pancakes are easy, as long as you select a high-quality gluten-free flour with a high proportion of rice flour in this mix.

Ingredients:

  • 1 1/2 cups gluten-free flour
  • 2 eggs
  • 2/3 cup milk

Instructions:

  1. Mix the gluten-free flour with a pinch of salt in a large mixing bowl.
  2. Whisk the eggs, then gradually pour into a well in the center of the flour.
  3. Stir, and then add the milk. The batter should be loose and pale in colour, if it’s too thick add another splash of milk.
  4. Heat a little oil in a frying pan, then pour a small ladleful of the batter into the pan. For some reason, the first pancake is often a dud, especially when using gluten-free flour. Don’t be put off by your first creation, if you’re patient you should be flipping lovely golden pancakes in no time.
  5. Once you’ve created a nice stack of pancakes, it’s time to think about fillings. Chocolate spread, banana, yogurt, fruit – the choice is yours!

Gluten-Free French Toast

If you’re using a shop bought gluten-free loaf, check its texture. Some gluten-free loaves can be too flimsy and fluffy, you need bread with some substance for this recipe.

Ingredients:

  • two slices of bread per person
  • 1 egg
  • 1/2 cup of milk
  • 1/2 cup of sugar
  • 1/2 cup of butter.

Instructions:

  1. Spread butter onto both sides of the bread slices. D
  2. ip the slices in sugar, then dip into a batter made of the egg and milk whisked together. Dip into the sugar again until the bread is well-coated.
  3. Heat more butter in a pan, when it starts sizzling place some of the bread slices in. Allow the bread to brown on each side (this should take around two minutes), then remove from the pan and serve with fresh fruit and yogurt if desired.

While it’s true that going gluten-free is easier and more accessible than ever before, avoiding gluten can still be tricky when it comes to baking. The foundation of most cakes, breads, and pastries is wheat flour, and finding the right substitute for a particular recipe can require a bit of experimenting. Fortunately, there are now plenty of gluten-free flours available that can create equally delicious and satisfying results. Whether you yourself have cut out gluten or are looking to bake for your gluten-free loved ones, read on to learn more about some of the most popular gluten-free flours and how to make the most of them.

Almond Flour

Made from finely ground almonds, this flour has a nutty flavor and a slightly grainy texture. It’s perfect for making cakes and cookies and adds a moist and tender crumb to your baked goods. Almond flour is also high in protein and healthy fats, making it a great choice for those looking for a nutrient-dense alternative to wheat flour.

Coconut Flour

Coconut is made from dried and ground coconut meat and has a slightly sweet and fruity taste. It’s highly absorbent, so you’ll need to use less of it in your recipes than you would other flours. Coconut flour is great for a wide variety of baked goods including gluten-free bread, cakes, and muffins, and can give your baked goods a light and fluffy texture.

Buckwheat Flour

Despite its name, buckwheat is not related to wheat and is completely gluten-free. Buckwheat flour has a nutty and earthy flavor that works well for savory dishes such as homemade pizzas and savory crepes. It has a slightly dense texture that gives your baked goods a satisfying chewiness and is also high in fiber and antioxidants.

There is nothing quite as exciting as hearing that there is a new flavor of Ben & Jerry’s on the shelf. The brand has been pushing the ice cream envelope for more than four decades and the interesting flavors keep coming!

The newest addition is the first of 2023 and a win for the vegan and gluten-free communities. Even more so, it’s triggering a bit of nostalgia.

Featuring a vanilla base, chunks of vegan oatmeal cookies, and swirls of marshmallow—this is the new Oatmeal Dream Pie.

The cookies come from an allergy-aware company called Partake. Its products are totally free of wheat, tree nuts, peanuts, milk, eggs, soy, fish, sesame, and shellfish.

The new flavor will also be a happy throwback for those who enjoyed Oatmeal Cookie Chunk. The beloved ice cream was sadly discontinued in 2012 after being on shelves for eight years.

“When our team of Flavor Gurus brainstorm the creation of any new flavor, we have all Ben & Jerry’s fans in mind, including those with or without food restrictions and allergies,” said Ben & Jerry’s Flavor Guru, Chris Rivard. “We wanted to bring a nostalgic sweet treat to life that everyone would enjoy — partnering with Partake to bring this non-dairy and gluten-free option to Ben & Jerry’s fans everywhere was an oatmeal dream come true!”

Fresh Cucumber Sandwich

This is a neat trick that you can get really creative with. Simply cut the cucumber into sidelong slices and pack with your favorite filling. Chicken, pepper, avocado, and tomato are a nice combo.

Honey Granola Bars

Buy a big bag of granola from the supermarket. This will come in handy on many occasions if you’re eating a gluten-free diet. Mix the granola with honey, oat flour, brown sugar, and coconut oil, and place the mix onto a baking tray. Bake for 10-15 minutes and then leave to set.

Peanut Butter and Oatmeal Cakes

Simply take one or two cupfuls of oats and mix them with a dollop of peanut butter. The oats will stick together, and you can eat them with your hands.

Do you have a gluten-free friend coming over for dinner and you’re not sure how to bake them a dessert they can enjoy? Or perhaps you ran out of all-purpose flour. Gluten-free flours can make great swaps in baked goods. Here are some gluten-free flours to try when you need alternatives to all-purpose flour.

Almond Flour

This flour is made from raw almonds and it’s high in protein and fiber. It gives baked goods a nuttly flavor and since it absorbs more moisture than all-purpose flour, you may need to use more of it when using it as a flour substitute.

Cassava Flour

Made from ground yuca root, cassava flour absorbs more liquid than other flours, so when using it as a substitute to all-purpose flour, start by adding less than the amount called for and then work in the full amount if your batter seems too liquidy.

Coconut Flour

High in fiber and low in carbs, coconut flour has a high moisture content and it absorbs moisture, which can end with denser desserts. When using coconut flour in baked goods, you may need additional liquid or fat.

Oat Flour

Oat flour is made with ground oats and it’s high in fiber. This flour is slightly sweet and it works well in homemade bread, baked goods, and pancakes.

We know this sounds just crazy, after years of dough crusts, stuffed crusts, and vegetable crusts, we figured out a way to have pizza without any crust! This will be great for those avoiding gluten or wheat or generally trying to cut down on carbs. Since we’re making this with store-bought sauce, it doesn’t take any special equipment or skills, we’re just not sure why we didn’t think about it before!

Ingredients

  • Grated cheese (to keep it authentic we prefer mozzarella but we’ll leave this up to you)
  • 1 or 2 toppings: pepperoni, mushrooms, olives, corn, whatever you like!
  • Your favorite pizza sauce

Instructions

  • Pre-heat a non-stick skillet over medium heat
  • Cover the bottom with a thin and even layer of cheese
  • Give it a moment to soften but don’t let it get fully melted
  • Add the toppings
  • Wait until the cheese starts to melt
  • Spread a layer of sauce on top and cover the skillet
  • Wait until the bottom and edges become golden and crispy
  • Remove from the heat and let it cool

Serving

Slide the crustless pizza onto a large plate and slice to share around, or roll it up and eat the entire thing yourself.

For various reasons, it might be important for you to maintain a gluten-free diet. For those suffering from conditions like celiac disease, for example, your well-being might even depend on your ability to avoid gluten while eating.

While some foods like bread are an obvious “no” for those who can’t consume gluten, other foods are trickier to diagnose. If you’re following a gluten-free diet, be sure to avoid these three foods that you might not have known contained gluten.

Couscous

Believe it or not, couscous actually contains gluten. While it might look like pasta or rice, couscous contains grains of durum wheat which do contain a lot of gluten. Be sure to avoid this food if you’re going gluten-free.

Cornbread

The name of this popular Southern side dish might seem a bit confusing, but don’t fall into the trap: cornbread isn’t only made of corn. In fact, it contains a large helping of all-purpose flour, something that is definitely not gluten-free.

Soy Sauce

Did you know that wheat is a main component of this popular Japanese sauce? Unfortunately for those following a gluten-free diet, soy sauce must be avoided unless you find a variety that’s made using a different technique and is specifically labeled as being GF.

Whether you’re looking for a delicious gluten-free alternative or you’re experimenting with clever ways to incorporate vegetables into your diet, cauliflower has it all. Here are a few unexpected ways to use this versatile veggie.

Nachos

Your favorite Mexican snack just became low carb. Thinly sliced, roasted cauliflower florets act as an excellent vehicle for all your favorite nacho toppings. Try using different condiments such as cheese, salsa, guacamole, and meat.

Pizza Dough

Making your pizza crust with cauliflower allows for a lighter dough, giving you the chance to go all out on crazy pizza toppings. We promise you won’t even be able to taste the difference between traditional crust and cauliflower crust!

Rice

Throw some cauliflower into a food processor to create rice-like pieces, then sauté it in olive oil until it has become soft. Cauliflower rice is a delicious, flavorful side for all of your go-to dishes. Extra seasoning such as lemon juice, garlic, or parsley adds a zesty kick to this earthy side.

Gnocchi

Move over, potatoes. These comforting Italian dumplings can be made with cauliflower, making an impressive dinner to serve for friends and family. These gnocchi pair beautifully with the flavors of a nutty, creamy pesto.
