Some of the greatest items on the breakfast menu include classics such as pancakes, waffles, French toast, and breakfast muffins. All delicious, all incredibly glutinous. If you need to cut gluten from your diet, giving up your favorite morning foods can be depressing. But all is not lost – read this list of gluten-free alternatives and swaps so you can continue to indulge on those lazy weekend mornings.

Pancakes

Gluten-free pancakes are easy, as long as you select a high-quality gluten-free flour with a high proportion of rice flour in this mix.

Ingredients:

  • 1 1/2 cups gluten-free flour
  • 2 eggs
  • 2/3 cup milk

Instructions:

  1. Mix the gluten-free flour with a pinch of salt in a large mixing bowl.
  2. Whisk the eggs, then gradually pour into a well in the center of the flour.
  3. Stir, and then add the milk. The batter should be loose and pale in colour, if it’s too thick add another splash of milk.
  4. Heat a little oil in a frying pan, then pour a small ladleful of the batter into the pan. For some reason, the first pancake is often a dud, especially when using gluten-free flour. Don’t be put off by your first creation, if you’re patient you should be flipping lovely golden pancakes in no time.
  5. Once you’ve created a nice stack of pancakes, it’s time to think about fillings. Chocolate spread, banana, yogurt, fruit – the choice is yours!

Gluten-Free French Toast

If you’re using a shop bought gluten-free loaf, check its texture. Some gluten-free loaves can be too flimsy and fluffy, you need bread with some substance for this recipe.

Ingredients:

  • two slices of bread per person
  • 1 egg
  • 1/2 cup of milk
  • 1/2 cup of sugar
  • 1/2 cup of butter.

Instructions:

  1. Spread butter onto both sides of the bread slices. D
  2. ip the slices in sugar, then dip into a batter made of the egg and milk whisked together. Dip into the sugar again until the bread is well-coated.
  3. Heat more butter in a pan, when it starts sizzling place some of the bread slices in. Allow the bread to brown on each side (this should take around two minutes), then remove from the pan and serve with fresh fruit and yogurt if desired.
