  • 4 medium-sized tomatoes 
  • 2 tablespoons goats cheese or ricotta
  • 1 tablespoon pesto
  • 1 sheet of puff pastry
  • Olive oil, for brushing
  • Salt

Instructions:

  1. Slice the tomatoes into rounds that are ¼-inch thick. Place them on a tray and add salt. Leave for 30 minutes and allow the excess water to drain. 
  2. Lay out the puff pastry and lightly score an inch-thick border around the edge. Brush olive oil along the edge. 
  3. Spread a layer of cheese on the pastry and then add dollops of pesto.

They can be quickly and easily made at home. If you are craving some pickled eggs or just want to try them for the first time, here is how to make some yourself.

Ingredients:

  • 6 eggs 
  • 1 cup white vinegar
  • ½ cup water
  • ½ tablespoon salt
  • ½ tablespoon sugar
  • ½ teaspoon mustard seeds (dried mustard)
  • ½ teaspoon black peppercorns
  • ½ teaspoon dill seeds

Instructions:

  1. Hard-boil the eggs. The best way to do it is to get eggs at room temperature and then place them in a pot with water. Bring the water to a boil, reduce the heat, and leave them for about 10 minutes.
  2. Combine white vinegar, water, salt, sugar, mustard seeds, black peppercorns, and dill seeds in a saucepan.

While the eggs are boiling, find yourself sandwich bread that you love. Toast it for best results, but that’s not necessary. When you’ve got your bread, take some mayonnaise and spread it on the bread.

Adding the Eggs

Once the eggs are boiled, cut them up using an egg cutter or even a knife. Spread out the cut egg pieces evenly across the bread. You can use as many eggs as you want at this point. Bear in mind that it’s the focal point of your sandwich.

Extra Seasonings

Tomatoes have a habit of turning from luscious to lousy super quickly. So, stop those tomatoes in their tracks by turning them into a tart. This quick and easy recipe uses just a few simple ingredients, but the outcome is totally impressive and oozing with flavor from head to-ma-toes!

Ingredients:

  • 4 medium-sized tomatoes 
  • 2 tablespoons goats cheese or ricotta
  • 1 tablespoon pesto
  • 1 sheet of puff pastry
  • Olive oil, for brushing
  • Salt
  • Pepper 

Instructions:

  1. Slice the tomatoes into rounds that are ¼-inch thick. Place them on a tray and add salt. Leave for 30 minutes and allow the excess water to drain. 
  2. Lay out the puff pastry and lightly score an inch-thick border around the edge. Brush olive oil along the edge. 
  3. Spread a layer of cheese on the pastry and then add dollops of pesto. 
  4. Arrange the tomatoes on the dough and season with pepper and a little bit of salt. 
  5. Bake at 425F for 20-25 minutes, until the puff pastry is golden. Drizzle with olive oil and pesto before serving.

Pickled eggs can be a great addition to salads and sandwiches or a quick snack for lovers of everything pickled. And you don’t even have to go to the grocery store to get some. They can be quickly and easily made at home. If you are craving some pickled eggs or just want to try them for the first time, here is how to make some yourself.

Ingredients:

  • 6 eggs 
  • 1 cup white vinegar
  • ½ cup water
  • ½ tablespoon salt
  • ½ tablespoon sugar
  • ½ teaspoon mustard seeds (dried mustard)
  • ½ teaspoon black peppercorns
  • ½ teaspoon dill seeds

Instructions:

  1. Hard-boil the eggs. The best way to do it is to get eggs at room temperature and then place them in a pot with water. Bring the water to a boil, reduce the heat, and leave them for about 10 minutes.
  2. Combine white vinegar, water, salt, sugar, mustard seeds, black peppercorns, and dill seeds in a saucepan.
  3. Bring the vinegar mixture to a boil and then simmer for around 5 minutes. Remove from heat and let the brine cool down for a bit.
  4. Remove the shells from the hard-boiled eggs and place them in a jar you previously sterilized.
  5. Pour the brine over the eggs until they are completely covered. If the eggs have trouble staying under the brine, place a clean and food-safe object on top to keep them submerged.
  6. Seal the jar with a lid and leave it in the refrigerator for at least a couple of days to allow the eggs to take on the flavors.
  7. Enjoy your pickled eggs.
