Ingredients:
- 4 medium-sized tomatoes
- 2 tablespoons goats cheese or ricotta
- 1 tablespoon pesto
- 1 sheet of puff pastry
- Olive oil, for brushing
- Salt
- Pepper
Instructions:
- Slice the tomatoes into rounds that are ¼-inch thick. Place them on a tray and add salt. Leave for 30 minutes and allow the excess water to drain.
- Lay out the puff pastry and lightly score an inch-thick border around the edge. Brush olive oil along the edge.
- Spread a layer of cheese on the pastry and then add dollops of pesto.
- Arrange the tomatoes on the dough and season with pepper and a little bit of salt.
- Bake at 425F for 20-25 minutes, until the puff pastry is golden. Drizzle with olive oil and pesto before serving.
