Crunchy and creamy are not textures that often go together, but that is just one of the reasons why this salad is so wonderful. So quick and simple to make, the cucumbers ensure that the dish keeps its freshness, while the tang from the sour cream gives it an extra zing!

Ingredients:

  • 2 English cucumbers
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons white wine vinegar
  • ⅓ cup chopped fresh dill
  • ¾ teaspoon sugar
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions:

  1. Cut the cucumbers in half and then slice each half down the middle lengthwise. Use the tip of a teaspoon to scoop out the center seeds. Cut each half into thin slices and place in a colander. Toss with the salt and let sit in the sink for at least 30 minutes, until the water drains out.
  2. In a medium bowl, combine the sour cream, mayonnaise, white wine vinegar, dill, sugar, and black pepper and mix well.
  3. When the cucumbers are ready, remove any excess water by tapping the colander several times on the base of the sink, then use a large wad of paper towels or a clean dish towel to pat the cucumbers dry. Add them to the dressing and toss well. Cover and chill until ready to serve.

Two of the most popular and healthy vegetables you can find are cucumber and zucchini. They are great for your daily green intake, either raw or cooked. The one thing that sometimes comes up as a problem when trying to work with both of these veggies is their watery seed core.

This core can make a cucumber sandwich soggy, and a vegetable stew into a slimy mess. But there’s a little secret for treating them that takes control of this wetness.

You’re going to need a large enough tray or board, a sharp knife, salt, and some kitchen towels. Make sure to do this well in advance, since this can take about an hour and a half, and some people go as far as preparing the evening before.

  • Slice your vegetable to even slices, either round or long shapes, it doesn’t matter.
  • Spread them in the large tray and sprinkle some salt on each layer.
  • Put another tray, cutting board, or plates, on top of the layers, and leave for anything from an hour to overnight in the fridge.

The result will lead to the water being separated from the crispy vegetable, so you can just pour it out and use the fresh cucumber or zucchini in your dish.

Ingredients

  • 2 medium cucumbers
  • 1 small red onion
  • 4 ounces sour cream
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh minced dill
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Start off by taking your two cucumbers and peeling them. While cucumber skins are appropriate in some recipes, you don’t want them on for this one. Once you’ve done that, cut the cucumbers into fairly thin slices.
  2. Next, thinly slice your small red onion.
  3. In a bowl, combine the sour cream, white wine vinegar, dill, salt, black pepper, and garlic powder. Stir until combined in a creamy sauce.
  4. Once you’ve done this, add the cucumbers and red onion. Stir to cover evenly, and then put into the refrigerator and allow to sit for 2-4 hours.

Take it out, and you’re ready to enjoy your creamy cucumber salad. Bon appetit!

Instructions

To start, you’ll need one cucumber. Start by halving this cucumber horizontally into two parts.

The next step is to remove the center of the cucumber, containing the seeds and most watery portion of the vegetable. You can easy do this with a spoon, scraping out the inside part of the cucumber.

Once you’ve scraped out this seedy middle portion, you’re ready to add sandwich ingredient options inside the cucumber. Note: you can actually cut the two pieces in half if you have an especially big cucumber. Later, you can use the other two half pieces to make another sandwich.

Barely processing the cucumber or changing its regular use, this recipe is a wonderful way to enjoy this vegetable as part of a hot dinner. Simply cut the cucumber to thick strips and leave to drain with some salt for about an hour, then toss in a pan with olive oil until they start browning. Season with lemon juice and mint and you’re all done.

Cucumber Dumplings

Two of the most popular and healthy vegetables you can find are cucumber and zucchini. They are great for your daily green intake, either raw or cooked. The one thing that sometimes comes up as a problem when trying to work with both of these veggies is their watery seed core.

This core can make a cucumber sandwich soggy, and a vegetable stew into a slimy mess. But there’s a little secret for treating them that takes control of this wetness.

You’re going to need a large enough tray or board, a sharp knife, salt, and some kitchen towels. Make sure to do this well in advance, since this can take about an hour and a half, and some people go as far as preparing the evening before.

  • Slice your vegetable to even slices, either round or long shapes, it doesn’t matter.
  • Spread them in the large tray and sprinkle some salt on each layer.
  • Put another tray, cutting board, or plates, on top of the layers, and leave for anything from an hour to overnight in the fridge.

The result will lead to the water being separated from the crispy vegetable, so you can just pour it out and use the fresh cucumber or zucchini in your dish.

Salads are always a refreshing and delicious option during the summer. The crisp crunch of vegetables is the perfect ally in the war against overheating, and the amount of vegetables on the market to try is never-ending.

One of our favorite summer veggies is cucumber, and we absolutely love this creamy cucumber salad during the year’s hottest months. Check it out!

Ingredients

  • 2 medium cucumbers
  • 1 small red onion
  • 4 ounces sour cream
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh minced dill
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

  1. Start off by taking your two cucumbers and peeling them. While cucumber skins are appropriate in some recipes, you don’t want them on for this one. Once you’ve done that, cut the cucumbers into fairly thin slices.
  2. Next, thinly slice your small red onion.
  3. In a bowl, combine the sour cream, white wine vinegar, dill, salt, black pepper, and garlic powder. Stir until combined in a creamy sauce.
  4. Once you’ve done this, add the cucumbers and red onion. Stir to cover evenly, and then put into the refrigerator and allow to sit for 2-4 hours.

Take it out, and you’re ready to enjoy your creamy cucumber salad. Bon appetit!

If you are looking to cut down on carbohydrates, these cucumber sandwiches are a perfect option for you. They are filling and tasty while containing almost zero carbs. Enjoy!

Instructions

To start, you’ll need one cucumber. Start by halving this cucumber horizontally into two parts.

The next step is to remove the center of the cucumber, containing the seeds and most watery portion of the vegetable. You can easy do this with a spoon, scraping out the inside part of the cucumber.

Once you’ve scraped out this seedy middle portion, you’re ready to add sandwich ingredient options inside the cucumber. Note: you can actually cut the two pieces in half if you have an especially big cucumber. Later, you can use the other two half pieces to make another sandwich.
