This Creamy Cucumber Salad is Crazy Good

Salads are always a refreshing and delicious option during the summer. The crisp crunch of vegetables is the perfect ally in the war against overheating, and the amount of vegetables on the market to try is never-ending.

One of our favorite summer veggies is cucumber, and we absolutely love this creamy cucumber salad during the year’s hottest months. Check it out!

Ingredients

  • 2 medium cucumbers
  • 1 small red onion
  • 4 ounces sour cream
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh minced dill
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

  1. Start off by taking your two cucumbers and peeling them. While cucumber skins are appropriate in some recipes, you don’t want them on for this one. Once you’ve done that, cut the cucumbers into fairly thin slices.
  2. Next, thinly slice your small red onion.
  3. In a bowl, combine the sour cream, white wine vinegar, dill, salt, black pepper, and garlic powder. Stir until combined in a creamy sauce.
  4. Once you’ve done this, add the cucumbers and red onion. Stir to cover evenly, and then put into the refrigerator and allow to sit for 2-4 hours.
