Cucumbers are incredibly healthy, they are greatĀ for hydration, full of fiber and antioxidants, and are very low on calories. Here are some cool recipes that cucumbers give a kick to.

A fantastic summer treat. Make a syrup with some lime, water, salt, and sugar, add some mint and cucumber and run the whole thing in the blender until itā€™s smooth. Make sure itā€™s cooled down before putting in the freezer for at least 3 hours, scraping with a fork every 30 minutes.

Braised Cucumber

Barely processing the cucumber or changing its regular use,Ā this recipe isĀ a wonderful way to enjoy this vegetable as part of a hot dinner. Simply cut the cucumber to thick strips and leave to drain with some salt for about an hour, then toss in a pan with olive oil until they start browning. Season with lemon juice and mint and youā€™re all done.
