Miso is a fermented soybean paste that serves as a staple in Japanese cooking. Salty, savory, and a little bit nutty, it’s used to add flavor to a wide variety of traditional recipes. One of the most popular, and, dare we say, our favorite, is miso soup, a brothy soup typically prepared with tofu, seaweed, and plenty of green onion. Many restaurants prepare their miso soups with stock made from dried fish, but if you prefer to avoid animal products, you can easily make your own vegan version at home and even add veggies for extra nutrition. Here’s our go-to recipe.

Ingredients:

  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 cup silken tofu, cubed
  • 1 cup sliced mushrooms (shiitake, button, or any variety you prefer)
  • 1 cup carrots, shredded
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 sheet nori seaweed, torn into small pieces

Instructions:

  1. Wash and chop the mushrooms, carrots, and green onions.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add garlic and sauté for about 1 minute until fragrant. Add mushrooms and carrots and sauté for an additional 3-5 minutes until the vegetables start to soften.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Reduce heat to low.
  4. Carefully add the tofu to the simmering broth. Allow it to cook for about 3-5 minutes until heated through.
  5. In a small bowl, whisk together the miso paste with a ladle of hot broth until all of the paste is dissolved. Add the miso mixture back to the pot and stir well.
  6. Add soy sauce and sesame oil to the pot, adjusting the seasoning to taste.
  7. Add the green onions and torn pieces of nori and simmer for an additional 2-3 minutes.
  8. Ladle the miso soup into bowls and serve hot. Enjoy!

Ingredients: 

  • 6 mini cucumbers
  • 2 tablespoons rice vinegar
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 3 garlic cloves, minced (or more if you’re a garlic girl like us)
  • Black sesame seeds
  • 1 tablespoon honey
  • 1 tablespoon Sriracha (or chili oil)
  • Red pepper flakes
  • Salt

Instructions:

  1. We prefer our cucumbers to be cut in an accordion style. To achieve this, place your cucumber in between two chopsticks. Cut your cucumber vertically until the knife hits the chopsticks. Then, flip your cucumber over, place between the chopsticks, and cut at a diagonal angle. This should result in an accordion-like cut when you pull them apart. Repeat for all of the cucumbers.
  2. Mix together the rest of your ingredients in a separate bowl. Start with these measurements, but feel free to add less or more depending on your preferences. 
  3. Pour the sauce over the cucumbers, covering them evenly. Let them marinate for at least 30 minutes, or even leave them to marinate overnight.

Ingredients

  • ¼ cup soy sauce
  • ¼ cup maple syrup
  • 1 teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • 1 teaspoon toasted sesame oil

Instructions

  • Add all ingredients to a bowl and stir until combined
  • If using as a marinade: add mixture to a ziplock bag with tofu or meat and refrigerate for at least 30 minutes
  • Remove meat or tofu and cook according to preference
  • If using as a sauce: add soy sauce mixture and tofu, meat, or vegetables to a pan over medium heat. Sautee for 5-7 minutes or until sauce has reduced and meat is cooked through. The sauce should be thick enough to stick to your ingredients. 
  • Serve over rice or rice noodles, sprinkle with chopped cilantro or red pepper flakes and enjoy!

There’s an undeniable chicness to Hetty Lui McKinnon’s Instagram page. Best described as minimalist, it offers tasty snippets from her kitchen, with the dishes presented on simple cookware and plain white dishes. But then, of course, McKinnon’s dishes are anything but simple.

Born in Australia and based in Brooklyn, McKinnon’s Chinese roots often come to play, with her recipes adding up to a sort of love letter to Asian cooking at large. Her most recent book, To Asia, With Love (which you can purchase here) offers a range of recipes, from the traditional to the modern, with an added McKinnon twist.

“The Chinese recipes in this book are all, in one way or another, inspired by my mother’s food,” said the food writer in an interview with SBS. According to McKinnon, she rediscovered her love for Asian cooking after moving to New York.

“Since moving to the US, I have felt more connected with my cultural heritage than ever before,” she relayed. “Honestly, I have never felt more ‘Asian’ and proud of my cultural identity.”

According to McKinnon, this story of self-discovery (or rather, rediscovery) through food is one that might resonate with many children of immigrants who grew up in a Western world. Alongside her most recent book, McKinnon published two other bestselling cookbooks: Neighbourhood and the award-winning Family, putting an emphasis on culture and heritage.

Being a vegetarian, her recipes are plant-based, but even ravenous meat-eaters will enjoy what her books have to offer. Some highlights include recipes for salt and pepper eggplant, buttery miso vegemite noodles, and stir-fried salt and vinegar potatoes.

Umami is a Japanese word meaning “pleasant savory taste,” and this simple sauce recipe is bursting with umami flavor. Sure to become your go-to for any Asian-style dishes, it’s simple and does double-duty as both a sauce and a marinade. It’s also versatile and sure to pair well with whatever ingredients you may have on hand. Perfect for noodles, tofu, vegetables, and more, it’s ready in under three minutes, and the best part is that it only has five ingredients!

Ingredients

  • ¼ cup soy sauce
  • ¼ cup maple syrup
  • 1 teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • 1 teaspoon toasted sesame oil

Instructions

  • Add all ingredients to a bowl and stir until combined
  • If using as a marinade: add mixture to a ziplock bag with tofu or meat and refrigerate for at least 30 minutes
  • Remove meat or tofu and cook according to preference
  • If using as a sauce: add soy sauce mixture and tofu, meat, or vegetables to a pan over medium heat. Sautee for 5-7 minutes or until sauce has reduced and meat is cooked through. The sauce should be thick enough to stick to your ingredients. 
  • Serve over rice or rice noodles, sprinkle with chopped cilantro or red pepper flakes and enjoy!

There’s an undeniable chicness to Hetty Lui McKinnon’s Instagram page. Best described as minimalist, it offers tasty snippets from her kitchen, with the dishes presented on simple cookware and plain white dishes. But then, of course, McKinnon’s dishes are anything but simple.

Born in Australia and based in Brooklyn, McKinnon’s Chinese roots often come to play, with her recipes adding up to a sort of love letter to Asian cooking at large. Her most recent book, To Asia, With Love (which you can purchase here) offers a range of recipes, from the traditional to the modern, with an added McKinnon twist.

“The Chinese recipes in this book are all, in one way or another, inspired by my mother’s food,” said the food writer in an interview with SBS. According to McKinnon, she rediscovered her love for Asian cooking after moving to New York.

“Since moving to the US, I have felt more connected with my cultural heritage than ever before,” she relayed. “Honestly, I have never felt more ‘Asian’ and proud of my cultural identity.”

According to McKinnon, this story of self-discovery (or rather, rediscovery) through food is one that might resonate with many children of immigrants who grew up in a Western world. Alongside her most recent book, McKinnon published two other bestselling cookbooks: Neighbourhood and the award-winning Family, putting an emphasis on culture and heritage.

Being a vegetarian, her recipes are plant-based, but even ravenous meat-eaters will enjoy what her books have to offer. Some highlights include recipes for salt and pepper eggplant, buttery miso vegemite noodles, and stir-fried salt and vinegar potatoes.
