Vegan Cocoa Truffles For The Win!

Being vegan doesn’t mean you have to sacrifice your sweet tooth; in fact, there are so many delicious vegan sweets that are not only satisfying but also healthful! These truffles are full of heart-healthy ingredients like nuts, dates, and dark chocolate! Here are some basic cocoa truffles that you can make and store, or enjoy right away. Happy cooking!

Ingredients

Pecans, walnuts, dates, dark chocolate, cocoa powder, salt, coconut oil, and cinnamon.

Instructions

  1. Put the nuts in a high-speed blender or food processor and blend until they are the consistency of meal. Set them aside.
  2.  Put the dates in a food processor and process until a ball forms or until only really small pieces remain. If your dates seem too dry, soak them in hot water for 10 minutes before you use them.
  3. Pulse half the nut meal and cocoa together with the cinnamon and salt until a dough forms.
  4. Scoop out enough to make a small ball and freeze them until solid.
  5. Melt the dark chocolate with the coconut oil
  6. Dip the truffles into the chocolate
  7. You can leave them as they are or top them with more nuts, cocoa nibs, cocoa powder, or whatever you have lying around!

Set at room temperature and enjoy!
