This Greek Broccoli Salad is Packed With Flavor

We’re always looking for an exciting take on salads as they are the perfect side for any meal. This Greek broccoli salad combines broccoli, sundried tomatoes, feta or olives, garlic, and lemon and it’s great for a picnic or potluck. Here’s how to make it.

Ingredients:

Broccoli Salad:

  • 1 large bunch of broccoli (about 1 1/4 pounds, florets removed and sliced into small pieces
  • 1/3 cup roughly chopped sundried tomatoes
  • 1/4 cup chopped shallot or red onion
  • 1/4 cup crumbled feta cheese or thinly sliced kalamata olives
  • 1/4 cup sliced almonds

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, pressed or minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • pinch red pepper flakes

Instructions:

  1. Toss together broccoli, sundried tomatoes, shallots or red onions, feta or olives, and almonds in a medium-sized bowl.
  2. In a small bowl whisk all of the dressing ingredients. Drizzle the dressing over the salad and toss it.
  3. Let the salad rest for 30 minutes before serving.
