This Chickpea Taco Recipe is Yum

Chances are pretty good that when you think of delicious Mexican food, you think of tacos. And chances are pretty good that when you think of tacos, you think of some kind of meat in a tortilla. Which means that, if you’re a vegan, you might not consider tacos as an option for your weekly lunch rotation.

That is, until you heard about these chickpea tacos. Not only are they delicious and have all of the classic flavors of a taco, but they also pack that protein in, just like your plant-based body needs. Ingredients

  • Olive oil
  • A can of chickpeas
  • Soy sauce
  • Chili powder
  • Garlic powder
  • Tortilla

Directions

Crack open your can of chickpeas, drain, and rinse. Heat up about a tablespoon of olive oil over medium heat. Once it’s warm, add the chickpeas, cooking until they’ve got a golden hue. Stir every so often so they don’t stick.

Add soy sauce, chili powder, and garlic powder. Saute for about five more minutes, until the chickpeas start looking brown. Taste and adjust seasonings if you want.

Serve on warm tortillas and top with your favorite taco toppings like pico de gallo and cilantro. Yum!
