The Best Vegan Sushi Bowl

Sushi is one of those things that is kind of challenging to make at home and can be pretty expensive to order from a restaurant. But sushi bowls are just as delicious and a hundred times easier to make. Here is a recipe for our favorite plant-based sushi bowl, packed will all of your favorite sushi ingredients.

Ingredients:

  • Sushi rice
  • Water
  • Rice vinegar
  • White sugar
  • Dried seaweed
  • Edamame
  • Carrot
  • Avocado
  • Sesame seeds
  • Soy sauce
  • Cucumber

Instructions:

  1. Start by making your sushi rice. Ideally, you’ll do this in a rice cooker, which will make it much easier. Cook the sushi rice, fluff it with a fork or paddle, and then season it with rice vinegar and white sugar. Let it cool down.
  2. In the meantime, steam your edamame to cook it.
  3. Grate your carrot, chop your avocado into small cubes, and cut your cucumber into strips or cubes. You’re also welcome to use any other of your favorite vegan sushi filling here, like sweet potato cubes or shitake mushroom.
  4. Now it’s time to plate! Put a layer of sushi rice at the bottom of your bowl.
  5. Next, add all of your veggies and edamame.
  6. Top with shredded dried seaweed and sesame seeds.
  7. Add soy sauce to taste.
