When you buy artisan bread from the bakery, it can be hard to use it all before it starts to stale. This yummy bread salad is a fantastic way to use up that bread and give it a delicious second life. Inspired by Italian Panzanella, this salad combines warm croutons with fresh veggies, olives, olive oil, and lemon juice.

Serve this bread salad as a colorful side dish. If you want to make it into a main meal, add tuna chunks and sliced hard boiled eggs.

Ingredients:

  • 4 slices stale sourdough bread
  • 1/2 teaspoon black onion seeds
  • 1 cup heirloom tomatoes, in red, yellow and orange.
  • 2 bell peppers
  • 1/2 red onion, finely sliced
  • 1/2 cup kalamata olives
  • 2 tablespoons olive oil
  • Juice of half a lemon

Instructions:

  1. Cut or tear the bread into rough chunks.
  2. Heat 1 tablespoon of the olive oil in a frying pan and add the bread and black onion seeds.
  3. Sauté the bread for 5-7 minutes until the edges are crisp and golden brown, stirring frequently to make sure all sides of the bread are heated. Place in a serving dish.
  4. Roughly chop the tomatoes and bell peppers.
  5. Assemble the salad with the bread, tomatoes, peppers, onion and olives.
  6. Drizzle with olive oil and lemon juice and toss well.
  7. Enjoy!

This herby tahini dip is the perfect accompaniment to pita, falafel, grilled meats, and more. You could also opt for a slightly thinner consistency and use it as a creamy salad dressing.

Any leftovers can be stored in an airtight container and kept for up to a week in the refrigerator. Just mix well before serving and you have a delicious dip on hand ready to enjoy!

Ingredients:

  • 3 tablespoons good quality tahini
  • 1 clove garlic, minced
  • Juice of 1 1/2 lemons
  • 1/2 cup flat leaf parsley, roughly chopped
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil
  • Cold water, as needed

Instructions:

  1. Place all the ingredients except the water in a bullet blender or similar food processor.
  2. Pulse until the mixture forms a thick paste.
  3. Slowly add cold water and blitz until the dip reaches a desired consistency. It should be creamy and drizzle-able.
  4. Transfer to a small serving bowl and top with a drizzle of olive oil, a couple of lemon slices and a scattering of parsley.

‘Orzotto’ is a super quick and easy alternative to risotto, made with orzo pasta. It’s ready in less than 30 minutes and there’s no hovering around the stove, stirring for hours on end! This tomato ‘orzotto’ is a perfect Italian-inspired midweek meal, full of fresh veggies, super simple, and deliciously comforting!

You can adapt this recipe to what you have in the house and what needs using up. The peppers, sundried tomato pesto, and basil could all be omitted. Instead, you could add olives, mushrooms or greens, replace the fresh tomatoes with canned, or even add cut up sausage or chorizo.

Ingredients:

  • 4 large ripe tomatoes, or 1 cup cherry tomatoes, roughly chopped
  • 2 red peppers, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili flakes
  • 2 teaspoons tomato paste
  • 1 tablespoon sundried tomato pesto
  • 1 cup orzo
  • 3 cups veggie stock
  • 1/2 cup parmesan
  • Handful fresh basil leaves, torn

Instructions:

  1. Warm the olive oil in a medium-sized sauté pan and add the garlic and chili flakes. Sizzle until aromatic.
  2. Add the peppers and tomatoes and stir well. Cook for around 5 minutes before adding the tomato paste and red pesto. Cook for another 5 minutes.
  3. Add the orzo and stock, mix well and cover.
  4. Cook for around 12 minutes, or until the orzo is cooked through, stirring occasionally.
  5. Turn off the heat and stir in the parmesan.
  6. Top with another drizzle of olive oil and the basil leaves.
  7. Enjoy!

Sometimes you really want that crunch with a meal, but you don’t want to add extra heaviness of regular chips. These fried rice paper chips are perfect to pair with any of your favorite dishes or sauces. We recommend trying them with salsa or vegetables. You can eat them straight or you can make little boats out of them and load them up—just be sure not to put too much or they’ll break! Rice paper chips are a great (and gluten free) alternative, and they’re super easy to make! It will only take you 5 minutes (yes, really!) and you only need two ingredients. 

Ingredients:

  • 6 Sheets Rice Paper
  • 2 Tablespoons of your favorite oil for frying (we like to use olive oil)

Instructions:

  1. Heat oil in a frying pan large enough to fit one rice paper sheet. Heat for 2 minutes.
  2. Put one sheet of rice paper into the oil. It should puff up within 2 seconds. 
  3. Remove from oil once the entire sheet has bubbled up and place on paper towels.
  4. Repeat with each sheet of rice paper. 
  5. Enjoy your crispy rice paper chips with all your favorite dishes and sauces. You can choose to season them with salt or your favorite spices. Just remember they are super delicate, so only sprinkle the seasoning–no rubbing!

A tuna fish sandwich is always a great option for a quick and easy lunch, but can be a little boring. Spend a few extra minutes whipping up this spicy, zesty alternative for a midday meal that is not only quick and convenient but also bursting with flavor!

Harissa is a chili paste from North Africa, made with roasted red peppers, warming spices and olive oil. Keep a jar on hand to add depth, complexity and punchy flavors to simple soups, sandwiches and grilled meats!

Ingredients:

  • 1 small wholegrain baguette
  • 1 can tuna, drained
  • 2 teaspoons lemon zest
  • 2 teaspoons lemon juice
  • 1 tablespoon mayonnaise
  • 1 teaspoon of harissa spread
  • 1 teaspoon extra virgin olive oil
  • 1 handful mixed leaves
  • 10 kalamata olives, destoned and sliced
  • 1/2 small red onion, thinly sliced
  • 1 salad tomato, thinly sliced
  • 1 hardboiled egg, sliced (optional)

Instructions:

  1. Preheat the oven to 350 °F.
  2. Warm the baguette for around 8-10 minutes.
  3. Meanwhile, mix the tuna with the mayonnaise, lemon juice and lemon zest and prepare all the veggies.
  4. Once warmed, cut the baguette in half and spread one half with harissa and drizzle the other half with olive oil.
  5. Next, top with the lemony tuna, sliced egg if using, red onion and olives.
  6. Top with the sliced tomato.
  7. Finally, add the mixed leaves and close your sandwich.
  8. Enjoy the tastiest tuna fish sandwich you ever tried!

Baba ghanoush is a quick and easy dip and side dish that can be made in minutes. Simply follow these 3 easy steps and enjoy with some fresh warm pitta bread.

Cook Eggplant

After preheating the oven to 180C, cut 3 eggplants lengthways. Slice the flesh so it cooks better and lightly coat with 2 tablespoons of olive oil. Season with salt and black pepper. Bake for 45-50 minutes until soft.

Prepare Food Processor

Peel two cloves of garlic and slice into two or three pieces. Add them to the food processor with 2 more tablespoons olive oil, 1 tablespoon tahini and half a tablespoon chili powder. Place in baked eggplant and squeeze in the juice of 1 or 2 lemons, depending on your taste. The best way to squeeze the lemon is to cut it in half and squeeze each part directly into the food processor, making sure to catch any stray pips.

Serve

When this is done, puree the mix in the food processor and serve with warm toasted pitta bread or as a side dish.

Сливки из тарелки с супом, например, уже не убрать, да и шоколадный соус на панкейках вряд ли польется по заданной траектории, по пути образуя идеальные подтеки. Все это приводит мою придирчивую натуру в отчаяние😁, и я могу долго кружить вокруг тарелки, не зная как лучше к ней подступиться. Так что я выработала для себя несколько правил при работе с такими ингредиентами н̶а̶и̶б̶о̶л̶е̶е̶ ч̶а̶с̶т̶о̶и̶с̶п̶о̶л̶ь̶з̶у̶е̶м̶ы̶м̶и̶👇🏻🔸Масло наношу на продукт кисточкой, обычно только на определенные области, а капли делаю точечно ложкой. А вчера впервые получилось аккуратно налить его из бутылки с дозатором, но тут уж дело практики и, мне кажется, все равно раз на раз не приходится. Со сливками работаю также ложкой, но есть проблема в слишком большой разнице в их консистенции в зависимости от производителя, потому и ведут они себя с блюдами по-разному. С каждым блюдом каждые сливки🤪🔸Мед и сладкие соусы всегда лью постепенно, как бы наслаивая в нужных местах, чтобы удлинить капли. Важно найти устраивающие вас по плотности и прозрачности, ибо некоторые из них ведут себя настолько отвратительно, что как не изгаляйся, в кадре выглядят не особо аппетитно. ⠀ 🔸И мой главный совет, очевидный в своей простоте😜, делать промежуточные снимки. Я всегда действую поэтапно, чтобы впоследствии было с чем работать во имя создания вкусной картинки при помощи Фотошоп🙌🏻 ⠀ P.S. Самое смешное, что в повседневной жизни я НЕ ем никакие соусы, максимум мед и натуральный йогурт с зеленью, так что будь моя воля и на фотографии бы их не использовала. Но красота требует жертв😅

Roasted Cauli-Broc with Hummus

This dish tastes wonderful and is packed full of goodness. Drizzle cauliflower and broccoli in olive oil and roast in the oven for 25-30 minutes on 200C. When the vegetables are roasted and crispy, serve on a bed of beetroot, spinach and walnuts. Serve with tahini hummus.

Roasted Red Pepper and Tomato Soup

Roast tomatoes, onion, garlic and thyme in olive oil for 25-30 minutes on 200C. When the vegetables have softened, mix in vinegar and blend the soup to your preferred consistency. Season to your tastes and top with ricotta, basil leaves and a drizzle of oil.

Tahini is a thick paste made with ground, roasted, and hulled sesame seeds, popular in the Middle East and the Mediterranean. It has a nutty, savory, slightly bitter flavor and creamy texture. Choose the highest quality tahini you can afford for a super tasty dip.

This herby tahini dip is the perfect accompaniment to pita, falafel, grilled meats, and more. You could also opt for a slightly thinner consistency and use it as a creamy salad dressing.

Any leftovers can be stored in an airtight container and kept for up to a week in the refrigerator. Just mix well before serving and you have a delicious dip on hand ready to enjoy!

Ingredients:

  • 3 tablespoons good quality tahini
  • 1 clove garlic, minced
  • Juice of 1 1/2 lemons
  • 1/2 cup flat leaf parsley, roughly chopped
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil
  • Cold water, as needed

Instructions:

  1. Place all the ingredients except the water in a bullet blender or similar food processor.
  2. Pulse until the mixture forms a thick paste.
  3. Slowly add cold water and blitz until the dip reaches a desired consistency. It should be creamy and drizzle-able.
  4. Transfer to a small serving bowl and top with a drizzle of olive oil, a couple of lemon slices and a scattering of parsley.

‘Orzotto’ is a super quick and easy alternative to risotto, made with orzo pasta. It’s ready in less than 30 minutes and there’s no hovering around the stove, stirring for hours on end! This tomato ‘orzotto’ is a perfect Italian-inspired midweek meal, full of fresh veggies, super simple, and deliciously comforting!

You can adapt this recipe to what you have in the house and what needs using up. The peppers, sundried tomato pesto, and basil could all be omitted. Instead, you could add olives, mushrooms or greens, replace the fresh tomatoes with canned, or even add cut up sausage or chorizo.

Ingredients:

  • 4 large ripe tomatoes, or 1 cup cherry tomatoes, roughly chopped
  • 2 red peppers, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili flakes
  • 2 teaspoons tomato paste
  • 1 tablespoon sundried tomato pesto
  • 1 cup orzo
  • 3 cups veggie stock
  • 1/2 cup parmesan
  • Handful fresh basil leaves, torn

Instructions:

  1. Warm the olive oil in a medium-sized sauté pan and add the garlic and chili flakes. Sizzle until aromatic.
  2. Add the peppers and tomatoes and stir well. Cook for around 5 minutes before adding the tomato paste and red pesto. Cook for another 5 minutes.
  3. Add the orzo and stock, mix well and cover.
  4. Cook for around 12 minutes, or until the orzo is cooked through, stirring occasionally.
  5. Turn off the heat and stir in the parmesan.
  6. Top with another drizzle of olive oil and the basil leaves.
  7. Enjoy!

Sometimes you really want that crunch with a meal, but you don’t want to add extra heaviness of regular chips. These fried rice paper chips are perfect to pair with any of your favorite dishes or sauces. We recommend trying them with salsa or vegetables. You can eat them straight or you can make little boats out of them and load them up—just be sure not to put too much or they’ll break! Rice paper chips are a great (and gluten free) alternative, and they’re super easy to make! It will only take you 5 minutes (yes, really!) and you only need two ingredients. 

Ingredients:

  • 6 Sheets Rice Paper
  • 2 Tablespoons of your favorite oil for frying (we like to use olive oil)

Instructions:

  1. Heat oil in a frying pan large enough to fit one rice paper sheet. Heat for 2 minutes.
  2. Put one sheet of rice paper into the oil. It should puff up within 2 seconds. 
  3. Remove from oil once the entire sheet has bubbled up and place on paper towels.
  4. Repeat with each sheet of rice paper. 
  5. Enjoy your crispy rice paper chips with all your favorite dishes and sauces. You can choose to season them with salt or your favorite spices. Just remember they are super delicate, so only sprinkle the seasoning–no rubbing!

A tuna fish sandwich is always a great option for a quick and easy lunch, but can be a little boring. Spend a few extra minutes whipping up this spicy, zesty alternative for a midday meal that is not only quick and convenient but also bursting with flavor!

Harissa is a chili paste from North Africa, made with roasted red peppers, warming spices and olive oil. Keep a jar on hand to add depth, complexity and punchy flavors to simple soups, sandwiches and grilled meats!

Ingredients:

  • 1 small wholegrain baguette
  • 1 can tuna, drained
  • 2 teaspoons lemon zest
  • 2 teaspoons lemon juice
  • 1 tablespoon mayonnaise
  • 1 teaspoon of harissa spread
  • 1 teaspoon extra virgin olive oil
  • 1 handful mixed leaves
  • 10 kalamata olives, destoned and sliced
  • 1/2 small red onion, thinly sliced
  • 1 salad tomato, thinly sliced
  • 1 hardboiled egg, sliced (optional)

Instructions:

  1. Preheat the oven to 350 °F.
  2. Warm the baguette for around 8-10 minutes.
  3. Meanwhile, mix the tuna with the mayonnaise, lemon juice and lemon zest and prepare all the veggies.
  4. Once warmed, cut the baguette in half and spread one half with harissa and drizzle the other half with olive oil.
  5. Next, top with the lemony tuna, sliced egg if using, red onion and olives.
  6. Top with the sliced tomato.
  7. Finally, add the mixed leaves and close your sandwich.
  8. Enjoy the tastiest tuna fish sandwich you ever tried!

Baba ghanoush is a quick and easy dip and side dish that can be made in minutes. Simply follow these 3 easy steps and enjoy with some fresh warm pitta bread.

Cook Eggplant

After preheating the oven to 180C, cut 3 eggplants lengthways. Slice the flesh so it cooks better and lightly coat with 2 tablespoons of olive oil. Season with salt and black pepper. Bake for 45-50 minutes until soft.

Prepare Food Processor

Peel two cloves of garlic and slice into two or three pieces. Add them to the food processor with 2 more tablespoons olive oil, 1 tablespoon tahini and half a tablespoon chili powder. Place in baked eggplant and squeeze in the juice of 1 or 2 lemons, depending on your taste. The best way to squeeze the lemon is to cut it in half and squeeze each part directly into the food processor, making sure to catch any stray pips.

Serve

When this is done, puree the mix in the food processor and serve with warm toasted pitta bread or as a side dish.

Сливки из тарелки с супом, например, уже не убрать, да и шоколадный соус на панкейках вряд ли польется по заданной траектории, по пути образуя идеальные подтеки. Все это приводит мою придирчивую натуру в отчаяние😁, и я могу долго кружить вокруг тарелки, не зная как лучше к ней подступиться. Так что я выработала для себя несколько правил при работе с такими ингредиентами н̶а̶и̶б̶о̶л̶е̶е̶ ч̶а̶с̶т̶о̶и̶с̶п̶о̶л̶ь̶з̶у̶е̶м̶ы̶м̶и̶👇🏻🔸Масло наношу на продукт кисточкой, обычно только на определенные области, а капли делаю точечно ложкой. А вчера впервые получилось аккуратно налить его из бутылки с дозатором, но тут уж дело практики и, мне кажется, все равно раз на раз не приходится. Со сливками работаю также ложкой, но есть проблема в слишком большой разнице в их консистенции в зависимости от производителя, потому и ведут они себя с блюдами по-разному. С каждым блюдом каждые сливки🤪🔸Мед и сладкие соусы всегда лью постепенно, как бы наслаивая в нужных местах, чтобы удлинить капли. Важно найти устраивающие вас по плотности и прозрачности, ибо некоторые из них ведут себя настолько отвратительно, что как не изгаляйся, в кадре выглядят не особо аппетитно. ⠀ 🔸И мой главный совет, очевидный в своей простоте😜, делать промежуточные снимки. Я всегда действую поэтапно, чтобы впоследствии было с чем работать во имя создания вкусной картинки при помощи Фотошоп🙌🏻 ⠀ P.S. Самое смешное, что в повседневной жизни я НЕ ем никакие соусы, максимум мед и натуральный йогурт с зеленью, так что будь моя воля и на фотографии бы их не использовала. Но красота требует жертв😅

Roasted Cauli-Broc with Hummus

This dish tastes wonderful and is packed full of goodness. Drizzle cauliflower and broccoli in olive oil and roast in the oven for 25-30 minutes on 200C. When the vegetables are roasted and crispy, serve on a bed of beetroot, spinach and walnuts. Serve with tahini hummus.

Roasted Red Pepper and Tomato Soup

Roast tomatoes, onion, garlic and thyme in olive oil for 25-30 minutes on 200C. When the vegetables have softened, mix in vinegar and blend the soup to your preferred consistency. Season to your tastes and top with ricotta, basil leaves and a drizzle of oil.
