A tuna fish sandwich is always a great option for a quick and easy lunch, but can be a little boring. Spend a few extra minutes whipping up this spicy, zesty alternative for a midday meal that is not only quick and convenient but also bursting with flavor!
Harissa is a chili paste from North Africa, made with roasted red peppers, warming spices and olive oil. Keep a jar on hand to add depth, complexity and punchy flavors to simple soups, sandwiches and grilled meats!
Ingredients:
- 1 small wholegrain baguette
- 1 can tuna, drained
- 2 teaspoons lemon zest
- 2 teaspoons lemon juice
- 1 tablespoon mayonnaise
- 1 teaspoon of harissa spread
- 1 teaspoon extra virgin olive oil
- 1 handful mixed leaves
- 10 kalamata olives, destoned and sliced
- 1/2 small red onion, thinly sliced
- 1 salad tomato, thinly sliced
- 1 hardboiled egg, sliced (optional)
Instructions:
- Preheat the oven to 350 °F.
- Warm the baguette for around 8-10 minutes.
- Meanwhile, mix the tuna with the mayonnaise, lemon juice and lemon zest and prepare all the veggies.
- Once warmed, cut the baguette in half and spread one half with harissa and drizzle the other half with olive oil.
- Next, top with the lemony tuna, sliced egg if using, red onion and olives.
- Top with the sliced tomato.
- Finally, add the mixed leaves and close your sandwich.
