However, if you’ve been eating pancakes for weekend breakfasts on repeat, you might be wanting to change up your traditional recipe. Check out these sweet potato pancakes, which create light and fluffy pancakes that taste amazing with sweet or savory toppings—the nutritional boost from the vegetables is a great addition, too.

Ingredients (to make 12 pancakes):

  • 2 cups of plain flour
  • 2 eggs
  • 1 1/2 cups of milk
  • 1 cup of peeled and cooked sweet potato
  • 2 teaspoons of baking powder
  • Oil, for frying

Instructions:

  1. In a large mixing bowl, combine the flour and baking powder.
  2. Create a well in the center of the flour mix and crack the eggs into this. Whisk into the flour.
  3. Gradually add the milk to the mix, stirring as you do so.
  4. Next, stir in the cooked sweet potato, whisking to ensure it is well combined.
  5. Heat around half a tablespoon of oil in a frying pan, and allow it to get hot. Pour a ladleful of the batter into the pan, cook on both sides and then remove from the pan and serve.
  6. Try topping these pancakes with maple and bacon syrup, grilled cheese or even sautéed vegetables.

They say breakfast is the most important meal of the day, but when it comes to feeling full and focused, exactly what we eat matters. Pancakes, for example, have been a breakfast staple in the US for decades, but the high-sugar content and lack of protein in traditional pancakes are a recipe for a blood sugar spike and crash. Fortunately, with a few simple swaps, it’s possible to make healthy, high-protein pancakes that are as nutritious as they are tasty. Read on for our go-to recipe.

Ingredients:

Dry Ingredients

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2 tablespoons flaxseed meal
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons maple syrup
  • 1/2 cup almond milk

Instructions:

  1. In a large bowl, mix together oat flour, almond flour, flaxseed meal, chia seeds, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk Greek yogurt, eggs, vanilla extract, maple syrup, and almond milk.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, taking care not to overmix. A few lumps are okay.
  4. Leave the batter to rest for 5-10 minutes. This will allow the flours and seeds to absorb the liquid, and enhances the texture of the pancakes.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease the surface with cooking spray.
  6. Pour 1/4 cup of batter onto the skillet for each pancake, leaving enough space to flip them with a spatula. Cook for about 2-3 minutes or until bubbles start to appear on the surface, then flip to cook the other side. Repeat until all batter is used.
  7. Remove from heat and serve with your favorite toppings. Our go-to is a drizzle of maple syrup, some fresh berries, and a handful of chopped nuts.

Italian pastries are often overlooked compared to other aspects of the country’s cuisine, taking a back seat to savory dishes as well as gelato for dessert. As much as we love a good Margherita pizza followed by an indulgent scoop of stracciatella, we’re also of the belief that Italian pastries deserve a bit more love, especially the almighty cannoli.

Cannoli is a classic Sicilian dessert consisting of fried dough shells filled with sweet ricotta cream, often studded with candied fruit or chocolate chips on the ends. They’re delicious in their own right but have also served as a source of inspiration for food bloggers to create recipes using key cannoli ingredients in new and unusual ways. Here are a few of our favorites.

Cannoli Pancakes

The only thing better than pastries for dessert is pastries for breakfast. Chocolate chip pancakes get a sweet upgrade in this recipe by Snappy Gourmet, which features ricotta cheese, orange zest, and chocolate chips in the batter. Top them with some whipped cream and a little powdered sugar for a little extra indulgence.

Vegan Cannoli Cheesecake

The only downside to cannoli is they can be tricky to eat—one bite into that hard pastry shell and the whole thing falls apart. Fortunately, mess is no issue in this recipe by Let’s Dish. Pancakes are an incredibly simple and delicious breakfast. They are also a great way to pack some protein in, as having a protein-loaded breakfast is great for feeling satisfied and energized for your day! These pancakes come together in minutes and are sure to be delicious.

Ingredients:

  • 1 ½ cup oats
  • 1 ripe banana
  • 1 cup plant-based milk
  • 1 scoop protein powder
  • 1 cup strawberries

Instructions:

  1. Blend your oats in a blender until you get a flour-like consistency. 
  2. Add your banana, plant-based milk, and protein powder into the blender with the blended oats. Blend until it forms a thick consistency. Do not overmix or your pancake mix will be runny. If it becomes too thin, you can add some more oats to thicken. 
  3. Cut your strawberries into small pieces. Fold into the pancake batter. Do not over-mix.
  4. Heat up butter on a frying pan with medium heat. Once the butter covers the entire pan, add your batter, making pancakes of whatever size you prefer. 
  5. When the bottom is golden brown, flip and repeat on the other side. Continue this until you use the entire batter. 
  6. Eat right away or freeze in an air-tight container for a quick breakfast during the week!

Ingredients:

Pancakes

  • 3 egg whites
  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups milk
  • 2 tablespoons  vegetable oil
  • 1 tablespoon butter, melted
  • 2 tablespoons lemon juice
  • 1 tablespoons poppy seeds
  • 1 lemon

Glaze

  • 2 cups powdered sugar
  • 3-4 tablespoons lemon juice
  • ½ teaspoon poppy seeds

Instructions:

  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, combine the milk, oil, melted butter, lemon juice, poppy seeds, and lemon zest. Mix thoroughly and add to the flour mixture. 
  3. Beat the egg whites until soft peaks form, and then gently fold into the batter.
  4. Let the batter rest for 5 minutes.
  5. Pour a quarter cup of batter onto a pan and wait until bubbles form on the surface and pop. Then, flip the pancake until golden brown on both sides.
  6. For the glaze, combine powdered sugar, lemon juice, and poppy seeds and mix until smooth. Pour over the pancakes as desired.

Searching for some fun and healthy breakfast ideas that your family will love? Try these fantastic apple and cinnamon pancakes. Made with a blend of wholewheat and rye flour, along with organic apple puree, these tasty pancakes are packed with nourishment!

Ingredients:

For the Pancakes:

  • 1/2 cup wholewheat flour
  • 1/2 cup rye flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons organic apple puree (available in large jars in most grocery stores)
  • 1 egg
  • 1/2 cup of whole milk
  • Coconut oil for cooking the pancakes.

For the Topping (per serving of 4 pancakes):

  • 2 tablespoons apple puree
  • 3 tablespoons greek yogurt
  • 1/2 teaspoon cinnamon
  • 2 teaspoons date syrup
  • 1 tablespoon toasted walnuts

Instructions:

  1. Combine all the dry pancake ingredients in a large mixing bowl and mix well.
  2. In a separate bowl, whisk together the milk, egg and apple puree.
  3. Make a well in the dry ingredients and add the milk and apple mixture. Whisk well until you have a thick batter. Add more milk or more flour until you have the desired consistency.
  4. Warm a large griddle pan on a medium heat and add a little coconut oil to lightly coat the pan.
  5. Use 1 and a 1/2 tablespoons of batter per pancake. Wait until bubbles appear on the surface before flipping each pancake and cooking the other side. You should make around 4 pancakes for each person.
  6. Top each serving with more apple puree and Greek yogurt, drizzle with date syrup and then scatter the walnuts over the top. Finish with a dusting of cinnamon and enjoy!

  2. In a separate bowl, whisk Greek yogurt, eggs, vanilla extract, maple syrup, and almond milk.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, taking care not to overmix. A few lumps are okay.
  4. Leave the batter to rest for 5-10 minutes. This will allow the flours and seeds to absorb the liquid, and enhances the texture of the pancakes.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease the surface with cooking spray.
  6. Pour 1/4 cup of batter onto the skillet for each pancake, leaving enough space to flip them with a spatula. Cook for about 2-3 minutes or until bubbles start to appear on the surface, then flip to cook the other side. Repeat until all batter is used.
  7. Remove from heat and serve with your favorite toppings. Our go-to is a drizzle of maple syrup, some fresh berries, and a handful of chopped nuts.

Italian pastries are often overlooked compared to other aspects of the country’s cuisine, taking a back seat to savory dishes as well as gelato for dessert. As much as we love a good Margherita pizza followed by an indulgent scoop of stracciatella, we’re also of the belief that Italian pastries deserve a bit more love, especially the almighty cannoli.

Cannoli is a classic Sicilian dessert consisting of fried dough shells filled with sweet ricotta cream, often studded with candied fruit or chocolate chips on the ends. They’re delicious in their own right but have also served as a source of inspiration for food bloggers to create recipes using key cannoli ingredients in new and unusual ways. Here are a few of our favorites.

Cannoli Pancakes

The only thing better than pastries for dessert is pastries for breakfast. Chocolate chip pancakes get a sweet upgrade in this recipe by Snappy Gourmet, which features ricotta cheese, orange zest, and chocolate chips in the batter. Top them with some whipped cream and a little powdered sugar for a little extra indulgence.

Vegan Cannoli Cheesecake

The only downside to cannoli is they can be tricky to eat—one bite into that hard pastry shell and the whole thing falls apart. Fortunately, mess is no issue in this recipe by Let’s Dish. By using real cream and ricotta cheese as a base and chocolate chips and pieces of shell as mix-ins, it creates a sort of reverse cannoli that’s easy to make and even easier to enjoy.

Pancakes are an incredibly simple and delicious breakfast. They are also a great way to pack some protein in, as having a protein-loaded breakfast is great for feeling satisfied and energized for your day! These pancakes come together in minutes and are sure to be delicious.

Ingredients:

  • 1 ½ cup oats
  • 1 ripe banana
  • 1 cup plant-based milk
  • 1 scoop protein powder
  • 1 cup strawberries

Instructions:

  1. Blend your oats in a blender until you get a flour-like consistency. 
  2. Add your banana, plant-based milk, and protein powder into the blender with the blended oats. Blend until it forms a thick consistency. Do not overmix or your pancake mix will be runny. If it becomes too thin, you can add some more oats to thicken. 
  3. Cut your strawberries into small pieces. Fold into the pancake batter. Do not over-mix.
  4. Heat up butter on a frying pan with medium heat. Once the butter covers the entire pan, add your batter, making pancakes of whatever size you prefer. 
  5. When the bottom is golden brown, flip and repeat on the other side. Continue this until you use the entire batter. 
  6. Eat right away or freeze in an air-tight container for a quick breakfast during the week!

  • Âľ cups sugar
  • 4 teaspoons baking powder
  • 2 teaspoons salt
  • 2 cups milk
  • 8 tablespoons oil
  • 8 eggs
  • 3 tablespoons peanut butter
  • 3 tablespoons jam

Instructions:

  1. Combine the dry ingredients in a bowl. 
  2. Add in the milk, oil, and eggs, and whisk until a thick batter forms. 
  3. Pour the batter into a baking tray and swirl through the peanut butter and jam. 
  4. Bake the batter in a 320°F oven for 15 minutes.

Weekends are for taking it a little bit easier. That means, you don’t have to wolf down that bowl of cereal or fly out the house with a piece of toast in hand. What it does mean is that you can sit down and indulge in these zingy lemon poppy pancakes (say that three times quickly).

Ingredients:

Pancakes

  • 3 egg whites
  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups milk
  • 2 tablespoons  vegetable oil
  • 1 tablespoon butter, melted
  • 2 tablespoons lemon juice
  • 1 tablespoons poppy seeds
  • 1 lemon

Glaze

  • 2 cups powdered sugar
  • 3-4 tablespoons lemon juice
  • ½ teaspoon poppy seeds

Instructions:

  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, combine the milk, oil, melted butter, lemon juice, poppy seeds, and lemon zest. Mix thoroughly and add to the flour mixture. 
  3. Beat the egg whites until soft peaks form, and then gently fold into the batter.
  4. Let the batter rest for 5 minutes.
  5. Pour a quarter cup of batter onto a pan and wait until bubbles form on the surface and pop. Then, flip the pancake until golden brown on both sides.
  6. For the glaze, combine powdered sugar, lemon juice, and poppy seeds and mix until smooth. Pour over the pancakes as desired.

However, they are unnecessary, and you can easily create a perfect pancake using any pan you have in the house.

Searching for some fun and healthy breakfast ideas that your family will love? Try these fantastic apple and cinnamon pancakes. Made with a blend of wholewheat and rye flour, along with organic apple puree, these tasty pancakes are packed with nourishment!

Ingredients:

For the Pancakes:

  • 1/2 cup wholewheat flour
  • 1/2 cup rye flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons organic apple puree (available in large jars in most grocery stores)
  • 1 egg
  • 1/2 cup of whole milk
  • Coconut oil for cooking the pancakes.

For the Topping (per serving of 4 pancakes):

  • 2 tablespoons apple puree
  • 3 tablespoons greek yogurt
  • 1/2 teaspoon cinnamon
  • 2 teaspoons date syrup
  • 1 tablespoon toasted walnuts

Instructions:

  1. Combine all the dry pancake ingredients in a large mixing bowl and mix well.
  2. In a separate bowl, whisk together the milk, egg and apple puree.
  3. Make a well in the dry ingredients and add the milk and apple mixture. Whisk well until you have a thick batter. Add more milk or more flour until you have the desired consistency.
  4. Warm a large griddle pan on a medium heat and add a little coconut oil to lightly coat the pan.
  5. Use 1 and a 1/2 tablespoons of batter per pancake. Wait until bubbles appear on the surface before flipping each pancake and cooking the other side. You should make around 4 pancakes for each person.
  6. Top each serving with more apple puree and Greek yogurt, drizzle with date syrup and then scatter the walnuts over the top. Finish with a dusting of cinnamon and enjoy!
