Ingredients:
- 1 ½ cup oats
- 1 ripe banana
- 1 cup plant-based milk
- 1 scoop protein powder
- 1 cup strawberries
Instructions:
- Blend your oats in a blender until you get a flour-like consistency.
- Add your banana, plant-based milk, and protein powder into the blender with the blended oats. Blend until it forms a thick consistency. Do not overmix or your pancake mix will be runny. If it becomes too thin, you can add some more oats to thicken.
- Cut your strawberries into small pieces. Fold into the pancake batter. Do not over-mix.
- Heat up butter on a frying pan with medium heat. Once the butter covers the entire pan, add your batter, making pancakes of whatever size you prefer.
- When the bottom is golden brown, flip and repeat on the other side. Continue this until you use the entire batter.
- Eat right away or freeze in an air-tight container for a quick breakfast during the week!
