Weekends are for taking it a little bit easier. That means, you don’t have to wolf down that bowl of cereal or fly out the house with a piece of toast in hand. What it does mean is that you can sit down and indulge in these zingy lemon poppy pancakes (say that three times quickly).
Ingredients:
Pancakes
- 3 egg whites
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ½ cups milk
- 2 tablespoons vegetable oil
- 1 tablespoon butter, melted
- 2 tablespoons lemon juice
- 1 tablespoons poppy seeds
- 1 lemon
Glaze
- 2 cups powdered sugar
- 3-4 tablespoons lemon juice
- ½ teaspoon poppy seeds
Instructions:
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
- In a separate bowl, combine the milk, oil, melted butter, lemon juice, poppy seeds, and lemon zest. Mix thoroughly and add to the flour mixture.
- Beat the egg whites until soft peaks form, and then gently fold into the batter.
- Let the batter rest for 5 minutes.
- Pour a quarter cup of batter onto a pan and wait until bubbles form on the surface and pop. Then, flip the pancake until golden brown on both sides.
- For the glaze, combine powdered sugar, lemon juice, and poppy seeds and mix until smooth. Pour over the pancakes as desired.
