Turn Breakfast Into a Treat With These Lemon Poppy Pancakes

Weekends are for taking it a little bit easier. That means, you don’t have to wolf down that bowl of cereal or fly out the house with a piece of toast in hand. What it does mean is that you can sit down and indulge in these zingy lemon poppy pancakes (say that three times quickly).

Ingredients:

Pancakes

  • 3 egg whites
  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups milk
  • 2 tablespoons  vegetable oil
  • 1 tablespoon butter, melted
  • 2 tablespoons lemon juice
  • 1 tablespoons poppy seeds
  • 1 lemon

Glaze

  • 2 cups powdered sugar
  • 3-4 tablespoons lemon juice
  • ½ teaspoon poppy seeds

Instructions:

  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, combine the milk, oil, melted butter, lemon juice, poppy seeds, and lemon zest. Mix thoroughly and add to the flour mixture. 
  3. Beat the egg whites until soft peaks form, and then gently fold into the batter.
  4. Let the batter rest for 5 minutes.
  5. Pour a quarter cup of batter onto a pan and wait until bubbles form on the surface and pop. Then, flip the pancake until golden brown on both sides.
  6. For the glaze, combine powdered sugar, lemon juice, and poppy seeds and mix until smooth. Pour over the pancakes as desired.
