Do you need a super healthy dinner that’s ready and on the table in under one hour? Then look no further than this incredibly simple roasting tin dinner, which provides up to four portions of fruit and vegetables. Make sure you use small baby potatoes, as not only will the flavor be better, these tiny potatoes cook in less time than larger varieties. To make this dish vegan, simply swap out the cheese for a dairy-free alternative, or crumble over some crushed nuts at the end of the cooking time.

Ingredients (to serve 4):

  • 1 1/2 cups of baby potatoes

    2 leeks2 tablespoons of olive oil1 cup of tomato passata2 heads of broccoli 1 tin of butter beans1 vegetable stock cube1 cup of boiling water1/2 cup of cheese, grated

Instructions:

  1. Bring a pan of water to the boil. Peel any discolored parts of the potatoes off, and boil the potatoes for 6 – 7 minutes.
  2. Meanwhile, cut the broccoli heads into small pieces (including the stalks).
  3. Use 1 tablespoon of olive oil to coat the broccoli, and place the broccoli in a large roasting tin.
  4. Place the broccoli in an oven heated to 400 °F. Roast for 10 minutes.
  5. Finely slice the leeks, and use the remaining olive oil to fry them in a large frying pan, taking care that they don’t burn. Cook until they are soft.
  6. Drain the potatoes, and add them along with the tomato passata to the roasting broccoli. Roast for a further 5 minutes.
  7. Stir the stock cube into the boiling water until it dissolves. Add the stock to the roasting tin. Roast for a further 15 minutes.
  8. Add the leeks as a top layer over the rest of the vegetables, and top with the grated cheese. Roast for a further 3 minutes.
  9. Remove the tin from the oven and portion the vegetables out into servings. This dish goes great with a fresh green salad on the side.

That’s why you need this easy baked rice pudding recipe up your sleeve—it’s a quick assembly job, and then the oven will do the rest for you!

Ingredients (to serve 6):

  • 1 3/4 cup of pudding rice
  • 1 teaspoon of good-quality vanilla paste
  • 3/4 cup of caster sugar
  • 1 cup of milk
  • 1 cup of double cream
  • 1 teaspoon of ground nutmeg
  • 1 tablespoon of unsalted butter, for greasing the oven dish

Instructions:

  1. Preheat the oven to 390° F.
  2. Grease a large oven dish with a capacity of 40 fluid ounces.
  3. In a large bowl, mix together the rice, cream, milk, vanilla paste, and sugar. Mix until the graininess of the sugar has dissolved.
  4. Pour this mix into the oven dish, and sprinkle over the nutmeg.
  5. Bake in the oven for 35 minutes, until the rice pudding is set and the top is golden brown.

When we’re not quite up for cooking but don’t want to spend big money on takeout, our lazy meal of choice is typically boxed macaroni and cheese. It’s a classic comfort food that never disappoints, and with carbohydrates, fat, and even some protein, more filling than other low-effort options. That said, the powdered cheese that most brands use can be a bit bland, and we typically like to include a few veggies in our meals whenever possible. Fortunately, we’ve found a few ways to doctor up boxed mac & cheese so that it’s more delicious and nutritious but still quick and easy to prepare. 

Add More Cheese

If you’re a serious cheese lover and the powdered mix doesn’t quite cut it, you can easily enhance the cheesiness of your mac by adding a bit of your own. Try a heavy handful of grated cheddar or ¼ of a block of cream cheese, stirring them into your prepared pasta along with the included cheese powder and a splash of milk. 

Eat Your Greens

Tossing in a few veggies is a great way to amp up the nutrition and make your mac and cheese a more well-rounded meal. Place a steamer basket with some chopped broccoli florets above your pasta while it cooks to soften them up, then stir them into your prepared pasta along with the cheese. For a bit of extra protein, add ½ cup of frozen peas, stirring gently to heat through.

Spice Things Up

Add a few shakes of your favorite spices to your mac and cheese to enhance its flavor and give it a little kick. Play around with options like garlic, onion, and paprika powder until you find a combination you enjoy, or try a dash of hot sauce if you can handle the heat. Top it all with some panko breadcrumbs for a satisfying crunch.

Sometimes all you want is a chocolate fix. And if you’re in the mood for something sweet, most of the time a regular old bar of chocolate just doesn’t do the trick. So why not whip up a delicious chocolate mousse instead?

Most of the pre-made chocolate mousses you find in stores contain gelatin—meaning it’s not suitable for vegetarians. But there’s really no reason to miss out on something tasty, especially when it’s this easy to make at home.

It’s so simple you’ll have to restrain yourself from wanting to make it every day. With only four ingredients and a super straightforward method, even the most novice bakers can make a real crowd-pleaser dessert that tastes much more complicated than it really is. 

Ingredients:

  • 100 grams of chocolate, whichever type and form you prefer
  • 2 level tablespoons instant coffee
  • 1 tablespoon liqueur 
  • 3 large eggs, separated

Instructions:

  1. Break the chocolate into chunks and melt in a bowl over boiling water. 
  2. While it’s melting, separate the eggs into whites and yolks. 
  3. Once the chocolate is melted, remove the bowl from the heat and immediately drop in the egg yolks only (not the whites), beating until the mixture begins to thicken.
  4. In a separate cup, dissolve the coffee in a little hot water and pour it into the chocolate mixture. 
  5. Stir in the liqueur.
  6. In another bowl, beat the egg whites until they reach just about soft peaks.
  7. Pour the chocolate mixture into the egg whites and whisk. Make sure not to over-whip so the mixture stays light and airy.
  8. Spoon into cups or dishes and chill in the fridge overnight.
  9. If you’re feeling fancy, top with strawberries or chocolate shavings.
  10. Enjoy!

Ingredients:

  • 1 cup of oat flour
  • ¾ cup applesauce (sweetened or unsweetened)
  • 1 small ripe banana, mashed
  • ½ cup unsweetened cocoa powder
  • ½ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking powder
  • A pinch of salt
  • A splash of non-dairy milk (oat milk and coconut milk work well)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease or line the baking pan.
  2. In a large bowl, combine oat flour, cocoa powder, baking powder, and a pinch of salt.
  3. In another bowl, mix applesauce, mashed bananas, maple syrup, and vanilla extract.

    for a smooth consistency (as needed).

When we’re not quite up for cooking but don’t want to spend big money on takeout, our lazy meal of choice is typically boxed macaroni and cheese. It’s a classic comfort food that never disappoints, and with carbohydrates, fat, and even some protein, more filling than other low-effort options. That said, the powdered cheese that most brands use can be a bit bland, and we typically like to include a few veggies in our meals whenever possible. Fortunately, we’ve found a few ways to doctor up boxed mac & cheese so that it’s more delicious and nutritious but still quick and easy to prepare. 

Add More Cheese

If you’re a serious cheese lover and the powdered mix doesn’t quite cut it, you can easily enhance the cheesiness of your mac by adding a bit of your own. Try a heavy handful of grated cheddar or ¼ of a block of cream cheese, stirring them into your prepared pasta along with the included cheese powder and a splash of milk. 

Eat Your Greens

Tossing in a few veggies is a great way to amp up the nutrition and make your mac and cheese a more well-rounded meal. Place a steamer basket with some chopped broccoli florets above your pasta while it cooks to soften them up, then stir them into your prepared pasta along with the cheese. For a bit of extra protein, add ½ cup of frozen peas, stirring gently to heat through.

Spice Things Up

Add a few shakes of your favorite spices to your mac and cheese to enhance its flavor and give it a little kick. Play around with options like garlic, onion, and paprika powder until you find a combination you enjoy, or try a dash of hot sauce if you can handle the heat. Top it all with some panko breadcrumbs for a satisfying crunch.

Sometimes all you want is a chocolate fix. And if you’re in the mood for something sweet, most of the time a regular old bar of chocolate just doesn’t do the trick. So why not whip up a delicious chocolate mousse instead?

Most of the pre-made chocolate mousses you find in stores contain gelatin—meaning it’s not suitable for vegetarians. But there’s really no reason to miss out on something tasty, especially when it’s this easy to make at home.

It’s so simple you’ll have to restrain yourself from wanting to make it every day. With only four ingredients and a super straightforward method, even the most novice bakers can make a real crowd-pleaser dessert that tastes much more complicated than it really is. 

Ingredients:

  • 100 grams of chocolate, whichever type and form you prefer
  • 2 level tablespoons instant coffee
  • 1 tablespoon liqueur 
  • 3 large eggs, separated

Instructions:

  1. Break the chocolate into chunks and melt in a bowl over boiling water. 
  2. While it’s melting, separate the eggs into whites and yolks. 
  3. Once the chocolate is melted, remove the bowl from the heat and immediately drop in the egg yolks only (not the whites), beating until the mixture begins to thicken.
  4. In a separate cup, dissolve the coffee in a little hot water and pour it into the chocolate mixture. 
  5. Stir in the liqueur.
  6. In another bowl, beat the egg whites until they reach just about soft peaks.
  7. Pour the chocolate mixture into the egg whites and whisk. Make sure not to over-whip so the mixture stays light and airy.
  8. Spoon into cups or dishes and chill in the fridge overnight.
  9. If you’re feeling fancy, top with strawberries or chocolate shavings.
  10. Enjoy!
