This recipe is a bit more of a project than a quick weeknight dinner, however it’s much easier that you think. These yummy potstickers are stuffed with a flavorful minced chicken filling and served with a tangy, umami dipping sauce.

To lighten the workload, get your partner or roommate involved and have a potsticker party!

Ingredients:

For the Dumplings:

  • 1 pound ground chicken thighs
  • 1/4 cup sliced green onions
  • 4 cloves minced garlic
  • 1 thumb-sized piece of minced fresh ginger
  • 1 tablespoon light soy sauce
  • 3 teaspoons toasted sesame oil
  • Around 30 round wonton wrappers, defrosted
  • Neutral oil, for pan-frying (we like coconut)

For the Dipping Sauce:

  • 1/4 cup light soy sauce
  • 1/4 cup dark soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons sugar
  • 4 green onions, finely sliced
  • 1 teaspoon chili oil
  • 1 teaspoon toasted sesame seeds

Instructions:

  1. Make the dipping sauce. Mix together all the ingredients in a small bowl until they are well combined. Set aside.
  2. In a mixing bowl, combine the chicken with the garlic, ginger, green onions, soy sauce and sesame oil and mix well.
  3. Lay out your wonton wrappers on a clean surface. Fill a shallow bowl with water. Place a heaped teaspoon of filling in each wrapper. Use your fingers to moisten the edges of the dumpling wrapper, fold it in half and then crimp, fold or press the edges to create your desired potsticker shape. There are plenty of YouTube videos to help if you get stuck!
  4. Once all the potstickers are complete, heat your oil over a medium heat in a large sauté pan with a lid.
  5. Carefully place the first batch of potstickers in the pan and sear for a few minutes until the bottoms are crisp and golden brown.
  6. Add a 1/4 cup water and pop the lid on. Allow the dumplings to steam for one minute and then place on a large plate.
  7. Continue cooking the potstickers in batches in this way until they’re all cooked.
  8. Serve with the dipping sauce, get your chopsticks at the ready and enjoy!

Dumplings

Longevity Noodles

The name speaks for itself as far as longevity noodles are concerned. In Chinese these are called Yi Mein. Featuring crunchy snow peas, water chestnuts, and shiitake mushrooms, these umami noodles are also said to bring you luck and prosperity.

Mochi

These little rice cakes are a traditional treat in Japan at new year. During the Heian period, nobles of the Imperial court believed that long strands of freshly made mochi symbolized long life and well-being. The sweet treats can be flavoured with everything from matcha to chocolate.

The tradition of serving dim sum originated in teahouses where they were a typical breakfast and brunch accompaniment, but these days the filled parcels are served around the world at any time of day. 

Part of the dumpling experience is dipping the hors d’oeuvres into a sauce that is the perfect combination of salty, sweet, and sour. In other words, it has to have the right amount of zing! Here’s how to make the perfect dim sim sauce.

Ingredients:

  • 2 tablespoons soy sauce
  • 1 teaspoon rice wine vinegar
  • ½ teaspoon sesame oil 
  • 1 teaspoon chili oil (or ½ teaspoon red chili flakes)
  • 1 teaspoon sugar
  • 1 tablespoon hot water
  • 1 teaspoon garlic, minced
  • ½ teaspoon ginger, minced 
  • 1 teaspoon toasted sesame seeds
  • 1/2 spring onion, chopped

Instructions:

  1. Dissolve the sugar in the hot water.

In China, when we talk about dumplings, we’re usually referring to boiled dumplings or Shui jiao.

This is the ultimate comfort food that’s eaten on a regular basis in this country, and it’s super delicious. Boiled dumplings are moist and juicy, and also the most important dish for celebrating Chinese (Lunar) New Year in northern China.

Gyoza a Japenese dumplings often filled with meat, but can always be made vegetarian. Many people buy the wrappers from a store, but actually they are very easy to make at home! The best part is that they only require three ingredients, and the wrappers themselves are vegan. They don’t take much time or effort at all, so give them a try and bring something new to the dinner table.

First, measure out 2 cups of flour and sift into a large bowl. Then, measure out 1/2 cup of boiled water. Dilute 1/2 teaspoon of salt into the water and then combine with the flour. Mix with a rubber spatula until everything is mixed together, and then knead the dough for ten minutes. Divide the dough into two parts, and roll each half into a  log. Wrap each log in plastic wrap and allow it to rest for 30 minutes.

Sprinkle some cornstarch onto your surface and cut each log into 1-inch pieces. Roll the pieces into a ball and then take a rolling pin to flatten them. Use a cookie cutter to cut out perfect circles and use the scraps to make more wrappers. That’s all! Stuff with your choice of filling, fry, and enjoy!

Gyoza a Japenese dumplings often filled with meat, but can always be made vegetarian. Many people buy the wrappers from a store, but actually they are very easy to make at home! The best part is that they only require three ingredients, and the wrappers themselves are vegan. They don’t take much time or effort at all, so give them a try and bring something new to the dinner table.

First, measure out 2 cups of flour and sift into a large bowl. Then, measure out 1/2 cup of boiled water. Dilute 1/2 teaspoon of salt into the water and then combine with the flour. Mix with a rubber spatula until everything is mixed together, and then knead the dough for ten minutes. Divide the dough into two parts, and roll each half into a  log. Wrap each log in plastic wrap and allow it to rest for 30 minutes.

Sprinkle some cornstarch onto your surface and cut each log into 1-inch pieces. Roll the pieces into a ball and then take a rolling pin to flatten them. Use a cookie cutter to cut out perfect circles and use the scraps to make more wrappers. That’s all! Stuff with your choice of filling, fry, and enjoy!
