We love dim sum. From crispy wontons to squidgy gaus, China’s selection of dumplings has yet to disappoint. The tradition of serving dim sum originated in teahouses where they were a typical breakfast and brunch accompaniment, but these days the filled parcels are served around the world at any time of day.

Part of the dumpling experience is dipping the hors d’oeuvres into a sauce that is the perfect combination of salty, sweet, and sour. In other words, it has to have the right amount of zing! Here’s how to make the perfect dim sim sauce.

Ingredients:

  • 2 tablespoons soy sauce
  • 1 teaspoon rice wine vinegar
  • ½ teaspoon sesame oil
  • 1 teaspoon chili oil (or ½ teaspoon red chili flakes)
  • 1 teaspoon sugar
  • 1 tablespoon hot water
  • 1 teaspoon garlic, minced
  • ½ teaspoon ginger, minced
  • 1 teaspoon toasted sesame seeds
  • 1/2 spring onion, chopped

Instructions:

  1. Dissolve the sugar in the hot water.
  2. Add the soy sauce, rice vinegar, chili oil, sesame oil, minced garlic and ginger, sesame seeds, and spring onion.
  3. Stir to combine and season to taste.
