Neapolitan Cupcakes are Such a Delight

Neapolitan cupcakes are not only gorgeous to look at, but also so tasty!

Ingredients:

  • 4 egg whites
  • 2 1/4 cups cake flour
  • 1 stick butter at room temperature
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 1 1/2 cups granulated sugar
  • 1 1/4 cups milk
  • 1/4 cup cocoa powder
  • 2 teaspoons vanilla extract
  • 1/4 cup strawberry jam

Frosting

  • 2 tablespoons heavy cream
  • 2 sticks softened butter
  • 2 teaspoons vanilla extract
  • 1 tablespoon strawberry jam
  • 6 cups powdered sugar
  • 2 tablespoons cocoa powder

Instructions:

  1. Set the oven to 350 F degrees and prepare a cupcake pan for 18 cupcakes.
  2. Mix the baking powder, flour, and salt together. Grab a second bowl and combine milk and egg whites together.
  3. In a third bowl add the sugar, butter, and vanilla extract. Beat these three ingredients together. Continue by including the mixtures from the two previous bowls. Do it slowly while also beating everything together.
  4. Divide the mixture into three parts. In the first one add the jam, in the second one add the cocoa powder, while the third one should remain the same.
  5. Add some of each batter into the cupcake liners. Leave the tins in the oven for 18 to 20 minutes.
  6. For the frosting, you need to first beat the butter. Add in vanilla extract, powdered sugar, and heavy cream.
  7. Divide into three parts. Add strawberry jam to the first, cocoa powder to the second, and one part should stay the same. Finish off by adding the three types of frosting on the Neapolitan cupcakes.
