Some words are just fun to say. Chimichurri is one of them. But do you know what’s even more fun than saying “chimichurri”? Yep, eating chimichurri. The herb sauce is a staple in Argentina and Uruguay where it is served over everything from meat to vegetables, and it should definitely be in your kitchen too.
Ingredients:
- 1 shallot, finely chopped
- 1 green or red chili, finely chopped
- 3–4 garlic cloves, finely chopped
- ½ cup red wine vinegar
- 1 teaspoon kosher salt
- ½ cup coriander
- ¼ cup parsley
- 2 tablespoons oregano
- ¾ cup extra-virgin olive oil
Instructions:
- Combine the shallot, chili, garlic, vinegar, and salt in a medium bowl. Allow to sit for 10 minutes.
- Finely chop the herbs and stir them into the mixture.
- Using a fork, whisk in the oil and season to taste.
