Chimichurri Sauce Goes Perfectly Over Everything

Some words are just fun to say. Chimichurri is one of them. But do you know what’s even more fun than saying “chimichurri”? Yep, eating chimichurri. The herb sauce is a staple in Argentina and Uruguay where it is served over everything from meat to vegetables, and it should definitely be in your kitchen too.

Ingredients:

  • 1 shallot, finely chopped
  • 1 green or red chili, finely chopped
  • 3–4 garlic cloves, finely chopped
  • ½ cup red wine vinegar
  • 1 teaspoon kosher salt
  • ½ cup coriander
  • ¼ cup parsley
  • 2 tablespoons oregano
  • ¾ cup extra-virgin olive oil

Instructions:

  1. Combine the shallot, chili, garlic, vinegar, and salt in a medium bowl. Allow to sit for 10 minutes.
  2. Finely chop the herbs and stir them into the mixture. 
  3. Using a fork, whisk in the oil and season to taste.
