Tofu is a healthy and versatile option. It is high in protein, iron, calcium and potassium, and an important staple of the vegan and vegetarian diets.
Here are 4 creative ways you can eat your tofu.
Scrambled Tofu
Cut your tofu into little chunks about half an inch in diameter and stir fry in olive oil on a high heat. You can fry it with noodles, rice, mixed vegetables or chickpeas. As the tofu cooks, constantly stir it, so that it scrambles like an egg.
Tofu Skewers
Roast, fry, or barbeque your tofu with chunks of mushrooms, peppers, garlic, and mixed vegetables. Skewer each ingredient on a stick until you have a long delicious skewer perfect for parties and gatherings.
Roast Tofu Broccoli
Break broccoli into medium-sized chunks and fly cut in half, so that they have two wings. Cut the tofu into chunks and place inside the broccoli. Season with salt and pepper and drizzle over olive oil. Then bake in the oven for 12-15 minutes, or until browned. Best served when broccoli is a little chargrilled.
Tofu Eggplant with Mozzarella
Wrap chunks of tofu and sliced mozzarella in eggplant, roast under the grill and serve with curry or stir fry.
