Potato salad is one of the easiest dishes to make, even if you happen to be a total newbie, but it all starts with picking the right type of potatoes. Grabbing just any variety at your local grocery store won’t do your potato salad any favors and here are three things you should keep in mind when preparing it.

Avoid Stretchy Potatoes

Stretchy potatoes, such as Russets, can do wonders for your mashed potatoes, but they won’t do your potato salad any good. The tricky thing about them is that they’re not so great at holding shape, and they may even fall apart during the cooking process.

Pick Waxy Potatoes

Waxy potatoes, such as Red Bliss, New, or Fingerling, are your best bet when it comes to potato salad because they’re great at holding shape. All-purpose potatoes like Yukon Gold can also be used as a substitute because they offer the perfect balance between starchy and waxy varieties.

Potato Size

When it comes to the size of your potatoes, you can stick to your personal preference, as long as the potatoes are similar in size so they could cook evenly. If you’re going to chop them before boiling them to speed up the process, also try to keep them similar in size.
