You’ll Fall in Love With These Almond Cookies

Cookies are welcomed in our homes any time of the year, but there is something special about having them around during the winter. They pair up perfectly with tea or hot chocolate and we all need plenty of those to keep us warm during cold days.

Sure, you could just head to the store and buy some cookies, but we think it is more fun (and tastier) to bake them at home. If you have some time on your hands, give a try to our quick and simple almond cookies that you’ll fall in love with.

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1/3 cup ground almonds
  • 2/3 cup butter
  • 1 cup brown sugar
  • ½ teaspoon cinnamon powder
  • ½ teaspoon baking powder
  • 2 eggs
  • A handful of sliced almonds for decoration

Instructions:

  1. Combine the dry ingredients into a bowl.
  2. Add the butter and one egg and mix until all ingredients are well blended into the dough.
  3. Cover the dough with plastic wrap and then pop it into the fridge for around 30 minutes.
  4. Roll the dough to 1/5 inch thickness.
  5. Cut out the cookies using a cookie cutter.
  6. Take out a baking sheet and line it with parchment paper. Place the cookies on the baking sheet. 
  7. Whisk the second egg. Brush each cookie with the egg mixture and decorate with sliced almonds.
  8. Bake at 375 F for 12 minutes.
  9. Let them cool off and dig in!
