Don’t you like when a dish is simple and quick to make but also delicious? That’s precisely what our cheese and peanut-stuffed tomatoes are bringing to the table. And you don’t even have to turn on your oven. How great is that?

Once prepared, these stuffed tomatoes can serve as an exciting side dish or a perfect late-night snack. Intrigued? Well, here is how to make them.

Ingredients

  • 5 large tomatoes
  • 1 cup farmer cheese
  • ½ cup cream cheese
  • 3 tablespoons sour cream
  • ¼ cup salted roasted peanuts

Instructions

  1. Wash the tomatoes and then cut the bottom off. Using a spoon, scoop out the insides of each tomato.
  2. Combine farmer cheese, cream cheese, and sour cream in a bowl and give them a good mix.
  3. Chop the peanuts to fine bits using a food processor. If you don’t have a food processor, you can do it by hand using a knife, but be careful.
  4. Combine the chopped peanuts with the cheese and mix until all the ingredients are combined, and peanut bits are well distributed.
  5. Fill the tomatoes with the cheese and peanuts mixture and pop them in the fridge for half an hour.
  6. Dig in!
