We’re so happy to finally be able to say that fall is officially here, and if you’re anything like us, you’ll be spending the next few months curled up under a blanket with a good book and a hot drink. While we love the classics like hot chocolate and cider, one of our favorite parts of fall is getting to experiment and try new recipes for seasonal drinks. Here are a few we’ve been loving so far.

Easy Warm Apple Chai Latte

Hot apple cider has never tasted better than it does in this recipe by Orchids + Sweet Tea. Prepared with plenty of warming spices, some vanilla almond milk, and a few bags of black tea, the best way to describe it is like a cozy sweater in a glass. For best results, skip the store-bought stuff and follow her simple instructions to make your cider from scratch using fresh gala apples.

Pumpkin Spice Hot Chocolate

We wouldn’t dream of making a fall-inspired list that didn’t include anything pumpkin flavored, and this year, our favorite recipe is by far this hot chocolate by Striped Spatula. It’s easy to whip up in less than 10 minutes and can be made using your choice of dark or white chocolate. For a grown-up treat, add a splash of bourbon or even dark rum.

Magical Vegan Butterbeer

Harry Potter is a classic series that we enjoy regardless of the season, but come fall, it’s even more fun to imagine ourselves at The Three Broomsticks enjoying a mug of hot Butterbeer with Harry and the gang. While we know that we can’t exactly jump on the Hogwarts Express and head to Hogsmeade, we can make our own Butterbeer to enjoy at home, and this recipe by Healthy Slow Cooking is a great way to do it. It’s got all of the magical flavor we love, 100% dairy-free.

My Mochi Apple Pie à la Mode

Mochi is a type of Japanese rice cake made of glutinous rice that gives the cakes their chewy texture. While not traditionally served with ice cream, modern palettes have led ice cream-filled versions of mochi to become popular in both Japan and the West. This fall, American brand My Mochi released an apple pie-flavored version of the treat made with vanilla ice cream and a gooey apple cinnamon filling. It’s a classic combination, made portable.

We have to admit that we were a bit skeptical about the idea of pumpkin spice-flavored popcorn, but in true Lesser Evil fashion, they made it work. Van Leeuwen Vegan Sweet Potato Marshmallow Pie Ice Cream

As much as we love sweet potato casserole, we’ve never understood who decided that anything that contains marshmallows as a key ingredient should be served as a side dish and not a dessert. While that won’t stop us from inhaling a plateful of the stuff this Thanksgiving, in the meantime, we’re more than happy to enjoy it in the form of Van Leeuwen’s newest plant-based ice cream flavor. It’s hard to think of fall when the weather is still so hot, but if there’s one thing that will help, it’s pumpkin spice! Get ready to see the autumnal flavor in practically everything. Personally, we like to meld our seasons and get the best of both worlds by making a pumpkin spice cold brew.

Ingredients:

  • 2 cups cold brew coffee
  • 4 tablespoons maple syrup
  • ½ cup heavy cream
  • 3 tablespoons pumpkin purée
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract

Instructions:

  1. Place a handful of ice into 2 glasses and pour 1 cup of cold brew into each glass. Add 1 tablespoon of maple syrup to each glass and stir.
  2. Pour the heavy cream, pumpkin purée, remaining maple syrup, pumpkin pie spice, and vanilla extract into a blender. Blend on high for 30-45 seconds until foamy.
  3. Divide the pumpkin cold foam equally between each glass of cold brew, pouring it over the top.

Is it too early to start with pumpkin spice treats? If yes, just keep on scrolling and forget we said anything. Nothing to see here. But for the rest of you who, like us, are waiting for pumpkin spice season, here is an incredible crumb cake to get you started. 

Ingredients:

  • 1½ sticks unsalted butter, melted
  • 2 large eggs 
  • 1 cup pumpkin purée
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup granulated sugar
  • 2 ½ cups light brown sugar
  • ½ cup oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 tablespoon ground ginger 
  • ½ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon kosher salt

Instructions:

  1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper. Allow the paper to hang over on all sides. 
  2. Whisk together 2 cups of all-purpose flour, ⅔ cup light brown sugar, 1½ teaspoon ground cinnamon, ½ teaspoon kosher salt, ½ teaspoon freshly grated nutmeg, and ¼ teaspoon ground cloves in a medium bowl. Add in the melted butter that has been slightly cooled, stirring with a spoon until most of the floury streaks are gone. Then, set the streusel aside.
  3. Whisk 1 cup of all-purpose flour, ½ teaspoon kosher salt, 1 teaspoon baking powder, ¼ teaspoon baking soda, and ½ teaspoon ground cinnamon in a large bowl.
  4. Whisk 2 large eggs, the pumpkin purée, ½ cup of granulated sugar, ¼ cup of light brown sugar, ½ cup of vegetable oil, ¼ teaspoon ground ginger, and 1 teaspoon vanilla extract until smooth and creamy. Add the pumpkin mixture to the dry ingredients and gently stir until just combined. Scrape the batter into the prepared pan, spreading all the way to the edges, and smooth the surface.
  5. Using your hands, squeeze the streusel into big clumps and evenly distribute them over the batter.
  6. Bake the cake for 35-40 minutes, until a thin knife inserted into the center comes out mostly clean. Transfer the pan to a wire rack and let the cake cool until the pan is no longer hot to the touch. Using the parchment paper, lift cake out of pan and onto the rack and allow it to cool completely.

If you like to make things from scratch, or if you have a few types of spice blends that you don’t use that often, then you might have considered making your own spice blends at home! Luckily it’s not that difficult—all you need are some whole spices and a spice grinder, or powdered spices that you can whisk together. Here are a few to try out.

Pumpkin Pie Spice

If you always buy pumpkin pie spice in fall and then find it sitting in your cabinet for the rest of the year, why not make your own fresh just for the one or two pumpkin pies you’ll make during the season? All you need is cinnamon, ginger, nutmeg, allspice, and cloves. Based on your own preferences, you’ll want about four times as much cinnamon as everything else, though you may like a little less cloves (since they are very strong) and a little extra ginger or nutmeg.

Cajun Seasoning

Another classic seasoning blend that you might only need a few times—and that will be extra good fresh—is cajun. For this blend, you just need sea salt, black pepper, onion powder, garlic powder, paprika, cayenne powder (adjusted for your spice preference), and dried oregano.

Garam Masala

Garam masala is a delicious spice mix used in many Indian dishes and is made from lots of spices that you likely have individually in your spice rack anyway. For garam masala just mix up cumin, coriander, cardamom, black pepper, cinnamon, cloves, and mace. Nutmeg works just fine if you don’t have mace.

Call us basic, but we’d be lying if we said we didn’t love a good Pumpkin Spice Latte in the fall. Starbucks really knew what they were doing when they created this iconic beverage, and while we’re happy to splurge on the original thing once in a while, at almost $6 a pop, these bad boys don’t come cheap. Fortunately, it’s not very difficult to prepare your own PSL at home and doing so even allows you to control exactly which and how much of each ingredient goes into your latte. Play around with different recipes until you find your perfect combination to create a custom PSL you’ll be sipping all season long. Here are some of our favorite ways to make a DIY-PSL.

Add Flavored Creamer

You can definitely go the full-out route and choose to make your own pumpkin spice-flavored syrup from scratch, but if you’re looking for something that requires a bit less production, try adding a splash of flavored creamer to your coffee. We especially love the PS flavor of nutpods’ almond & coconut creamer.

Use Real Pumpkin

It may be easier to just add a few pumps of flavored syrup, but if you’d prefer to go with real ingredients, we love this recipe by The Wooden Skillet. It’s made using regular coffee, so you don’t need an espresso machine, and it contains real pumpkin sweetened with just a hint of maple syrup.

Use Flavored Coffee

While you’ll still need to add a bit of cream and sweetener, another easy way to make your own PSL is by using a pumpkin-flavored coffee as your base. Then, add your regular cream and sugar of choice, either plain or ones with complementary flavors like cinnamon. We like Green Mountain’s Pumpkin Spice flavored K-Cup pods.

My Mochi Apple Pie à la Mode

Mochi is a type of Japanese rice cake made of glutinous rice that gives the cakes their chewy texture. While not traditionally served with ice cream, modern palettes have led ice cream-filled versions of mochi to become popular in both Japan and the West. This fall, American brand My Mochi released an apple pie-flavored version of the treat made with vanilla ice cream and a gooey apple cinnamon filling. It’s a classic combination, made portable.

Lesser Evil Pumpkin Spice Organic Popcorn

We have to admit that we were a bit skeptical about the idea of pumpkin spice-flavored popcorn, but in true Lesser Evil fashion, they made it work. With warming fall spices, organic cane sugar, and a hint of Himalayan Pink Salt, we like to think of this one as kettle corn’s chic older sister—she’s sweet, she’s bold, and we want to be just like her. 

Van Leeuwen Vegan Sweet Potato Marshmallow Pie Ice Cream

As much as we love sweet potato casserole, we’ve never understood who decided that anything that contains marshmallows as a key ingredient should be served as a side dish and not a dessert. While that won’t stop us from inhaling a plateful of the stuff this Thanksgiving, in the meantime, we’re more than happy to enjoy it in the form of Van Leeuwen’s newest plant-based ice cream flavor. It’s that time of year again—the coveted Pumpkin Spice Latte is back, and Starbucks’ new fall menu has officially been announced. Espresso, pumpkin syrup, and a sprinkle of cinnamon—what’s not to love?

Iced Apple Crisp Oatmilk Shaken Espresso

Try saying that one five times fast. The name may be difficult to pronounce, but Starbucks’ newest apple-flavored beverage is anything but difficult to enjoy. An update on the Apple Crisp Oatmilk Macchiato, the new version is made with less milk than its predecessor, making it a great choice for those who prefer autumnal coffee drinks that actually taste like coffee.

Iced Pumpkin Cream Chai Tea Latte

If coffee isn’t your jam, you’ll be psyched to discover that Starbucks has finally included a tea-based beverage in its official fall lineup. The brand’s signature chai concentrate pairs perfectly with pumpkin cold foam cream and a dusting of pumpkin pie spice for an indulgent beverage brimming with fall flavors.

It’s hard to think of fall when the weather is still so hot, but if there’s one thing that will help, it’s pumpkin spice! Get ready to see the autumnal flavor in practically everything. Personally, we like to meld our seasons and get the best of both worlds by making a pumpkin spice cold brew.

Ingredients:

  • 2 cups cold brew coffee
  • 4 tablespoons maple syrup
  • ½ cup heavy cream
  • 3 tablespoons pumpkin purée
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract

Instructions:

  1. Place a handful of ice into 2 glasses and pour 1 cup of cold brew into each glass. Add 1 tablespoon of maple syrup to each glass and stir.
  2. Pour the heavy cream, pumpkin purée, remaining maple syrup, pumpkin pie spice, and vanilla extract into a blender. Blend on high for 30-45 seconds until foamy.
  3. Divide the pumpkin cold foam equally between each glass of cold brew, pouring it over the top.

Is it too early to start with pumpkin spice treats? If yes, just keep on scrolling and forget we said anything. Nothing to see here. But for the rest of you who, like us, are waiting for pumpkin spice season, here is an incredible crumb cake to get you started. 

Ingredients:

  • 1½ sticks unsalted butter, melted
  • 2 large eggs 
  • 1 cup pumpkin purée
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup granulated sugar
  • 2 ½ cups light brown sugar
  • ½ cup oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 tablespoon ground ginger 
  • ½ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon kosher salt

Instructions:

  1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper. Allow the paper to hang over on all sides. 
  2. Whisk together 2 cups of all-purpose flour, ⅔ cup light brown sugar, 1½ teaspoon ground cinnamon, ½ teaspoon kosher salt, ½ teaspoon freshly grated nutmeg, and ¼ teaspoon ground cloves in a medium bowl. Add in the melted butter that has been slightly cooled, stirring with a spoon until most of the floury streaks are gone. Then, set the streusel aside.
  3. Whisk 1 cup of all-purpose flour, ½ teaspoon kosher salt, 1 teaspoon baking powder, ¼ teaspoon baking soda, and ½ teaspoon ground cinnamon in a large bowl.
  4. Whisk 2 large eggs, the pumpkin purée, ½ cup of granulated sugar, ¼ cup of light brown sugar, ½ cup of vegetable oil, ¼ teaspoon ground ginger, and 1 teaspoon vanilla extract until smooth and creamy. Add the pumpkin mixture to the dry ingredients and gently stir until just combined. Scrape the batter into the prepared pan, spreading all the way to the edges, and smooth the surface.
  5. Using your hands, squeeze the streusel into big clumps and evenly distribute them over the batter.
  6. Bake the cake for 35-40 minutes, until a thin knife inserted into the center comes out mostly clean. Transfer the pan to a wire rack and let the cake cool until the pan is no longer hot to the touch. Using the parchment paper, lift cake out of pan and onto the rack and allow it to cool completely.

If you like to make things from scratch, or if you have a few types of spice blends that you don’t use that often, then you might have considered making your own spice blends at home! Luckily it’s not that difficult—all you need are some whole spices and a spice grinder, or powdered spices that you can whisk together. Here are a few to try out.

Pumpkin Pie Spice

If you always buy pumpkin pie spice in fall and then find it sitting in your cabinet for the rest of the year, why not make your own fresh just for the one or two pumpkin pies you’ll make during the season? All you need is cinnamon, ginger, nutmeg, allspice, and cloves. Based on your own preferences, you’ll want about four times as much cinnamon as everything else, though you may like a little less cloves (since they are very strong) and a little extra ginger or nutmeg.

Cajun Seasoning

Another classic seasoning blend that you might only need a few times—and that will be extra good fresh—is cajun. For this blend, you just need sea salt, black pepper, onion powder, garlic powder, paprika, cayenne powder (adjusted for your spice preference), and dried oregano.

Garam Masala

Garam masala is a delicious spice mix used in many Indian dishes and is made from lots of spices that you likely have individually in your spice rack anyway. For garam masala just mix up cumin, coriander, cardamom, black pepper, cinnamon, cloves, and mace. Nutmeg works just fine if you don’t have mace.

Call us basic, but we’d be lying if we said we didn’t love a good Pumpkin Spice Latte in the fall. Starbucks really knew what they were doing when they created this iconic beverage, and while we’re happy to splurge on the original thing once in a while, at almost $6 a pop, these bad boys don’t come cheap. Fortunately, it’s not very difficult to prepare your own PSL at home and doing so even allows you to control exactly which and how much of each ingredient goes into your latte. Play around with different recipes until you find your perfect combination to create a custom PSL you’ll be sipping all season long. Here are some of our favorite ways to make a DIY-PSL.

Add Flavored Creamer

You can definitely go the full-out route and choose to make your own pumpkin spice-flavored syrup from scratch, but if you’re looking for something that requires a bit less production, try adding a splash of flavored creamer to your coffee. We especially love the PS flavor of nutpods’ almond & coconut creamer.

Use Real Pumpkin

It may be easier to just add a few pumps of flavored syrup, but if you’d prefer to go with real ingredients, we love this recipe by The Wooden Skillet. It’s made using regular coffee, so you don’t need an espresso machine, and it contains real pumpkin sweetened with just a hint of maple syrup.

Use Flavored Coffee

While you’ll still need to add a bit of cream and sweetener, another easy way to make your own PSL is by using a pumpkin-flavored coffee as your base. Then, add your regular cream and sugar of choice, either plain or ones with complementary flavors like cinnamon. We like Green Mountain’s Pumpkin Spice flavored K-Cup pods.
