While not traditionally served with ice cream, modern palettes have led ice cream-filled versions of mochi to become popular in both Japan and the West. This fall, American brand My Mochi released an apple pie-flavored version of the treat made with vanilla ice cream and a gooey apple cinnamon filling. It’s a classic combination, made portable.
We have to admit that we were a bit skeptical about the idea of pumpkin spice-flavored popcorn, but in true Lesser Evil fashion, they made it work. With warming fall spices, organic cane sugar, and a hint of Himalayan Pink Salt, we like to think of this one as kettle corn’s chic older sister—she’s sweet, she’s bold, and we want to be just like her.

All you need is cinnamon, ginger, nutmeg, allspice, and cloves. Based on your own preferences, you’ll want about four times as much cinnamon as everything else, though you may like a little less cloves (since they are very strong) and a little extra ginger or nutmeg.
Another classic seasoning blend that you might only need a few times—and that will be extra good fresh—is cajun. For this blend, you just need sea salt, black pepper, onion powder, garlic powder, paprika, cayenne powder (adjusted for your spice preference), and dried oregano.
Garam masala is a delicious spice mix used in many Indian dishes and is made from lots of spices that you likely have individually in your spice rack anyway. For garam masala just mix up cumin, coriander, cardamom, black pepper, cinnamon, cloves, and mace. Nutmeg works just fine if you don’t have mace.
