No-Bake Fall Dessert Recipes

Even though fall is fast approaching, there are plenty of places where it still feels like summer, at least in terms of the weather. Baking is one of our favorite activities any time of year, but if we can avoid it, we prefer not to use the oven when it’s 90 degrees outside.

Fortunately, there are ways to create delicious desserts with no actual baking involved, and plenty of no-bake recipes that incorporate all of our favorite seasonal flavors like apple and pumpkin. Here are a few that we love and will continue to make until the temperature drops.

No-Bake Pumpkin Cheesecake

‘No-bake’ definitely doesn’t have to mean there’s no flavor. These little pumpkin cheesecakes are as delicious as they are adorable—packed with pumpkin puree and a blend of delicious fall spices. They can be served in whatever jars or glasses you’ve got on hand.

Raw Apple Tarts

These cute little tarts not only require no baking but also contain no added sugar. They’re a healthier option if you’re looking for a seasonal treat that isn’t too sweet or indulgent. 

Carrot Cake Bites

Carrots may not be the most obvious choice for a fall recipe, but the spices traditionally used in carrot cake are very similar to those typically paired with pumpkin. These bites are also a great choice for those in search of a gluten-free dessert.
