Michaela Vais, who runs the successful plant-based blog ElaVegan, shared a recipe for this immune-boosting juice that you have to try this fall. It’s packed with a long list of healthy ingredients—including beets, carrots, oranges, and limes—and you can make it in a matter of minutes.

Ingredients

  • 3 medium beetroots
  • 3 medium carrots
  • 3 oranges
  • 175 g celery stalks
  • 75 g ginger root
  • 1-2 limes or 1/2 lemon
  • 2 apples (optional)

Instructions

  1. After washing your beets, carrots, celery, and ginger, cut beetroots into chunks and chop your carrots. Peel and slice your oranges and limes, while leaving the rest of the produce unpeeled.
  2. After cutting all the ingredients into small chunks, place your oranges and limes into the juicer, and proceed by adding celery, ginger, beets, and carrots. You can also add a little sweetness to the juice by adding two apples.
  3. Stir the juice, divide it into 4-8 servings, and enjoy it fresh or refrigerate leftovers for up to three days.

Is Nutella your favorite chocolate spread, but you sometimes wish it was 100% plant-based and dairy-free? If that’s the case, you can always try making your own, and food blogger Michaela Vais recently shared a delicious recipe every vegan should try.

Vais aka ElaVegan claims it takes five minutes or less to make your own vegan Nutella, and you can get pretty creative with the ingredients. Nut butter is a must, but you can pick between several different options, including peanut and hazelnut butter.

The same goes for your choice of plant-based milk, and you can even replace the maple syrup with several different liquid sweeteners or opt for a sugar-free alternative. If you’re a coffee addict, adding a dash of instant coffee is a great way to enhance the flavor of your Nutella. Check out ElaVegan’s recipe below.

Ingredients:

  • 1/4 cup (70 grams) nut butter of choice
  • 4 tablespoon(80 grams) maple syrup
  • 3 tablespoon (18 grams) cocoa powder
  • 2 tablespoon water or plant-based milk
  • 1 teaspoon vanilla extract
  • A pinch of sea salt
  • A dash of instant coffee

Instructions:

  1. Pour all the ingredients into a medium-sized bowl, and use a whisk to stir them until the mixture gets smooth and creamy.
  2. If your vegan Nutella isn’t sweet enough, add more maple syrup to the mix.
  3. If you’re not happy with the thickness of your Nutella, make it thicker by adding more butter and cocoa powder, or use some water to make it thinner.

Once you decide to go 100% vegan, you’ll probably miss a couple of foods from your old life. If sour cream happens to be one of them, you can easily replace it with a home-made, dairy-free alternative.

Michaela Vais aka ElaVegan shared our favorite recipe for vegan sour cream, and it includes three basic ingredients—cashews, dairy-free yogurt, and lemon juice. It only takes a couple of minutes to make, and we promise you won’t be disappointed with the final result.

Ingredients:

  • 1 1/3 cup (200 g) cashews
  • 2/3 cup (160 g) dairy-free yogurt
  • 1/2 cup (120 ml) water
  • 2 tbsp white vinegar
  • 2 tbsp lemon juice
  • 1/2-2/3 tsp sea salt

Instructions:

  1. The cashews should be soaked in cold water overnight or for at least 3 hours. You can speed up this process by boiling them until softened, for approximately 10-15 minutes.
  2. After draining and rinsing your cashews, combine them with the rest of the ingredients in a blender.
  3. Blend until the mixture has a smooth and creamy texture. It may take a couple of minutes, depending on your blender.
  4. After blending all ingredients together, taste the cream and add more vinegar or lemon juice if necessary.
  5. Serve the sour cream right away, or put it in the fridge if you don’t want to use it immediately. You can use leftovers for up to six days.
  6. If the mixture is too thick once you get it out of the fridge, whisk in a bit of water to make it thinner.

  • 3 oranges
  • 175 g celery stalks
  • 75 g ginger root
  • 1-2 limes or 1/2 lemon
  • 2 apples (optional)

Instructions

  1. After washing your beets, carrots, celery, and ginger, cut beetroots into chunks and chop your carrots. Peel and slice your oranges and limes, while leaving the rest of the produce unpeeled.
  2. After cutting all the ingredients into small chunks, place your oranges and limes into the juicer, and proceed by adding celery, ginger, beets, and carrots. You can also add a little sweetness to the juice by adding two apples.
  3. Stir the juice, divide it into 4-8 servings, and enjoy it fresh or refrigerate leftovers for up to three days.

Is Nutella your favorite chocolate spread, but you sometimes wish it was 100% plant-based and dairy-free? If that’s the case, you can always try making your own, and food blogger Michaela Vais recently shared a delicious recipe every vegan should try.

Vais aka ElaVegan claims it takes five minutes or less to make your own vegan Nutella, and you can get pretty creative with the ingredients. Nut butter is a must, but you can pick between several different options, including peanut and hazelnut butter.

The same goes for your choice of plant-based milk, and you can even replace the maple syrup with several different liquid sweeteners or opt for a sugar-free alternative. If you’re a coffee addict, adding a dash of instant coffee is a great way to enhance the flavor of your Nutella. Check out ElaVegan’s recipe below.

Ingredients:

  • 1/4 cup (70 grams) nut butter of choice
  • 4 tablespoon(80 grams) maple syrup
  • 3 tablespoon (18 grams) cocoa powder
  • 2 tablespoon water or plant-based milk
  • 1 teaspoon vanilla extract
  • A pinch of sea salt
  • A dash of instant coffee

Instructions:

  1. Pour all the ingredients into a medium-sized bowl, and use a whisk to stir them until the mixture gets smooth and creamy.
  2. If your vegan Nutella isn’t sweet enough, add more maple syrup to the mix.
  3. If you’re not happy with the thickness of your Nutella, make it thicker by adding more butter and cocoa powder, or use some water to make it thinner.

Once you decide to go 100% vegan, you’ll probably miss a couple of foods from your old life. If sour cream happens to be one of them, you can easily replace it with a home-made, dairy-free alternative.

Michaela Vais aka ElaVegan shared our favorite recipe for vegan sour cream, and it includes three basic ingredients—cashews, dairy-free yogurt, and lemon juice. It only takes a couple of minutes to make, and we promise you won’t be disappointed with the final result.

Ingredients:

  • 1 1/3 cup (200 g) cashews
  • 2/3 cup (160 g) dairy-free yogurt
  • 1/2 cup (120 ml) water
  • 2 tbsp white vinegar
  • 2 tbsp lemon juice
  • 1/2-2/3 tsp sea salt

Instructions:

  1. The cashews should be soaked in cold water overnight or for at least 3 hours. You can speed up this process by boiling them until softened, for approximately 10-15 minutes.
  2. After draining and rinsing your cashews, combine them with the rest of the ingredients in a blender.
  3. Blend until the mixture has a smooth and creamy texture. It may take a couple of minutes, depending on your blender.
  4. After blending all ingredients together, taste the cream and add more vinegar or lemon juice if necessary.
  5. Serve the sour cream right away, or put it in the fridge if you don’t want to use it immediately. You can use leftovers for up to six days.
  6. If the mixture is too thick once you get it out of the fridge, whisk in a bit of water to make it thinner.
