Thought sweet potatoes were the only veggie that could cross over to the other side? Not a chance! Move over, sweet potatoes, because these candied carrots are our new obsession. 

Ingredients:

  • 2 pounds carrots
  • ½ cup unsalted butter
  • ½ cup fresh orange juice
  • 1/3 cup brown sugar
  • 2 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • ½ cup toasted pecans, chopped (optional)

Instructions:

  1. Slice the carrots diagonally, crosswise, into 1″ thick pieces.
  2. In a large skillet, melt the butter over medium-high heat until it begins to foam. Be careful not to let it brown.
  3. Add the carrots in one layer and season with half a teaspoon of salt. Allow the carrots to cook for around 6-7 minutes, stirring occasionally, until the edges begin to caramelize and turn golden.
  4. Lower the heat to medium-low and add the orange juice. Continue to cook until the juice has reduced by half. Stir in the brown sugar, maple syrup, cinnamon, and the remainder of the salt.
  5. Increase the heat to medium and cook until the carrots are tender but not mushy. The glaze should be thick and syrupy, and coat the carrots. Season with pepper and top with pecans.

There are many vegetables that will grow indoors—you just need to learn how. With some good soil and light and a lot of care and attention, you will have a nice vegetable patch.

You first need to find a large enough container for the roots to have room to grow, with a hole for drainage. Plant your veggie scraps or seeds using some indoor soil and put them in front of a window that gets sunlight. Summer is the best time to start growing your own veggies and you want to make sure the soil stays moist.

Here is a list of some of the vegetables you can grow in the comfort of your home.

Carrots

Carrots don’t need so much space around them so you can grow a lot of them in a small space indoors, with a lot of light.

Potatoes

Potatoes are really easy to grow if you use the scraps of sprouted potatoes. Cut them into pieces and lay the sprout side up on at least four inches of soil. Cover them in more soil, and make sure to keep them covered, and you will have potatoes in about two months.

Tomatoes

Growing tomatoes indoors is possible—you just want to make sure they get a lot of light during the day, so they are best grown in the summer. Also choose a smaller variety, so they have more chance of growing.

When it comes to eating vegetables, specifically cucumbers and carrots, there’s usually a bit of a controversy. This controversy boils down to one similar question: if you’re eating it raw, should you peel it or not? Whichever side of the spectrum you fall on, it’s important to note that there is a solid division out there. There are many who feel that the skin makes a carrot or cucumber less tasty—and there are others who feel that regardless of taste, you get all the nutrients from the skin and therefore you must keep it. However, we have a solution to this issue.

We completely hear both arguments. We’ve experimented with both, and both ways are enjoyable. But we’ve also come to the conclusion that you can actually do both options at once, and here’s how.

Let’s say you’ve got your carrot, it’s rinsed, and it’s ready to be peeled. Take out your peeler, but instead of peeling the whole thing, only peel half of the carrot.

This might sound like a wonky decision, but if done right, it actually provides an elegant solution. If you peel your carrot in vertical stripes, you should get the best of both worlds. By the time you’re done, it should look kind of like a zebra, but inside of black and white stripes, it’s “unpeeled” and “peeled” stripes. Give it a try and tell us how it went!

This roasted carrot recipe has two of the most important characteristics of a good weekday dinner recipe. First, it’s easy to make, not requiring any unusual ingredients or too much of your time. And second, it’s so delicious that you’ll enjoy it as much as you might takeout. So, without further ado, check out the last roasted carrot recipe that you’ll ever need to try.

Ingredients

  • 1 pound carrots
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 2 tablespoons maple syrup
  • 1/2 teaspoon crushed red pepper flakes
  • Salt to taste

Directions

  • Preheat your oven to 400 degrees. Line a baking sheet with foil. Cut your carrots into 3-inch pieces, cutting on the diagonal if you want to be fancy.
  • Spread the cut carrots out on your baking sheet. Top with melted butter, brown sugar, maple syrup, and red pepper flakes. Toss to combine and then sprinkle some salt on top.
  • Bake the carrots until brown around the edges. This can take up to an hour, but keep checking your carrots every 20 minutes or so to give them a quick toss and see their status. They’ll be done once they’re super tender.
  • Take them out, let cool a bit, and serve, adding another sprinkle of salt if desired.

Thought sweet potatoes were the only veggie that could cross over to the other side? Not a chance! Move over, sweet potatoes, because these candied carrots are our new obsession. 

Ingredients:

  • 2 pounds carrots
  • ½ cup unsalted butter
  • ½ cup fresh orange juice
  • 1/3 cup brown sugar
  • 2 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • ½ cup toasted pecans, chopped (optional)

Instructions:

  1. Slice the carrots diagonally, crosswise, into 1″ thick pieces.
  2. In a large skillet, melt the butter over medium-high heat until it begins to foam. Be careful not to let it brown.
  3. Add the carrots in one layer and season with half a teaspoon of salt. Allow the carrots to cook for around 6-7 minutes, stirring occasionally, until the edges begin to caramelize and turn golden.
  4. Lower the heat to medium-low and add the orange juice. Continue to cook until the juice has reduced by half. Stir in the brown sugar, maple syrup, cinnamon, and the remainder of the salt.
  5. Increase the heat to medium and cook until the carrots are tender but not mushy. The glaze should be thick and syrupy, and coat the carrots. Season with pepper and top with pecans.

As the cost of food rises, growing your own produce is starting to sound more appealing. For those that don’t have access to a garden, that does not mean it can’t be done. There are many vegetables that will grow indoors—you just need to learn how. With some good soil and light and a lot of care and attention, you will have a nice vegetable patch.

You first need to find a large enough container for the roots to have room to grow, with a hole for drainage. Plant your veggie scraps or seeds using some indoor soil and put them in front of a window that gets sunlight. Summer is the best time to start growing your own veggies and you want to make sure the soil stays moist.

Here is a list of some of the vegetables you can grow in the comfort of your home.

Carrots

Carrots don’t need so much space around them so you can grow a lot of them in a small space indoors, with a lot of light.

Potatoes

Potatoes are really easy to grow if you use the scraps of sprouted potatoes. Cut them into pieces and lay the sprout side up on at least four inches of soil. Cover them in more soil, and make sure to keep them covered, and you will have potatoes in about two months.

Tomatoes

Growing tomatoes indoors is possible—you just want to make sure they get a lot of light during the day, so they are best grown in the summer. Also choose a smaller variety, so they have more chance of growing.

When it comes to eating vegetables, specifically cucumbers and carrots, there’s usually a bit of a controversy. This controversy boils down to one similar question: if you’re eating it raw, should you peel it or not? Whichever side of the spectrum you fall on, it’s important to note that there is a solid division out there. There are many who feel that the skin makes a carrot or cucumber less tasty—and there are others who feel that regardless of taste, you get all the nutrients from the skin and therefore you must keep it. However, we have a solution to this issue.

We completely hear both arguments. We’ve experimented with both, and both ways are enjoyable. But we’ve also come to the conclusion that you can actually do both options at once, and here’s how.

Let’s say you’ve got your carrot, it’s rinsed, and it’s ready to be peeled. Take out your peeler, but instead of peeling the whole thing, only peel half of the carrot.

This might sound like a wonky decision, but if done right, it actually provides an elegant solution. If you peel your carrot in vertical stripes, you should get the best of both worlds. By the time you’re done, it should look kind of like a zebra, but inside of black and white stripes, it’s “unpeeled” and “peeled” stripes. Give it a try and tell us how it went!

This roasted carrot recipe has two of the most important characteristics of a good weekday dinner recipe. First, it’s easy to make, not requiring any unusual ingredients or too much of your time. And second, it’s so delicious that you’ll enjoy it as much as you might takeout. So, without further ado, check out the last roasted carrot recipe that you’ll ever need to try.

Ingredients

  • 1 pound carrots
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 2 tablespoons maple syrup
  • 1/2 teaspoon crushed red pepper flakes
  • Salt to taste

Directions

  • Preheat your oven to 400 degrees. Line a baking sheet with foil. Cut your carrots into 3-inch pieces, cutting on the diagonal if you want to be fancy.
  • Spread the cut carrots out on your baking sheet. Top with melted butter, brown sugar, maple syrup, and red pepper flakes. Toss to combine and then sprinkle some salt on top.
  • Bake the carrots until brown around the edges. This can take up to an hour, but keep checking your carrots every 20 minutes or so to give them a quick toss and see their status. They’ll be done once they’re super tender.
  • Take them out, let cool a bit, and serve, adding another sprinkle of salt if desired.
