This simple yet rewarding recipe for cashew nut butter offers a delightful alternative to store-bought spreads, showcasing the rich flavor and creamy texture of cashew nuts. Let’s dive into the world of nutty goodness and discover how easy it is to create your own velvety smooth spread. Here’s a recipe for how to make it.

Ingredients:

  • 2 cups of raw cashew nuts
  • Optional: pinch of salt, honey, or other sweeteners to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Spread the raw cashew nuts in a single layer on a baking sheet. Roast the cashews in the preheated oven for 8-10 minutes, or until they are lightly golden and fragrant. Be careful not to let them burn.
  2. Allow the roasted cashews to cool slightly before transferring them to a food processor. Process the cashews in the food processor for about 5-7 minutes, scraping down the sides as needed, until they transform into a smooth and creamy consistency. The cashews will go through stages of finely ground, then clumping together, and finally, becoming smooth and buttery.
  3. If desired, add a pinch of salt, honey, or any other sweeteners to taste, and continue processing until well incorporated.
  4. Transfer the freshly made cashew nut butter to a clean, airtight jar or container. Store it in the refrigerator for up to 2 weeks.
  5. Enjoy your homemade cashew nut butter spread on toast, drizzled over fruit, or used as a dip for veggies. Experiment with different flavor variations to suit your taste preferences.

Whether eaten as a spread on toast or used in cooking, butter is one of the most important ingredients in the kitchen. A guaranteed way to improve your butter experience is to make it yourself. It’s a bit more effort, but it’s totally worth it, and you can customize it to suit your preferences by adding garlic or parsley for example. Here’s a recipe for how you can make it.

Ingredients:

  • 2 cups of double or heavy cream
  • Salt (if making salted butter)

Instructions:

  1. Make sure your cream is at room temperature, as cold cream will slow the process down. Put your cream into the mixing bowl of an electric mixer. Begin mixing it at a slow or medium speed. After a while, it will start taking on the appearance of whipped cream.
  2. After a few minutes of further mixing, the cream will start to look thicker than whipped cream. At this stage, the fat molecules in the cream will separate from the liquid. You will start to see small clumps forming, which is the butterfat starting to separate from the buttermilk.
  3. Once your butter has formed, stop mixing. Wrap your butter in cheesecloth, and squeeze it to extract the buttermilk. You can use buttermilk for other recipes, so don’t throw it away.
  4. Rinse your butter under cold water to get rid of any remaining buttermilk. If you don’t remove buttermilk, the butter will go rancid more quickly. If you want salted butter, you can knead a generous pinch of salt into the butter at this point.
  5. Shape your butter into your preferred shape and place it in a jar with a lid on it to prevent it from going bad quickly. You can add basically any ingredient you like if you want to flavor your butter, but even if plain, there should be a notable increase in quality from your shop-bought stuff.

The simple but very delicious all-butter shortbread is an often-underrated biscuit. It might not have the glamor of other sweet treats, but when made well and with all-butter, it is one of the best winter snacks out there. Here is a recipe for an all-butter shortbread that will melt in the mouth.

Ingredients:

  • 1 cup of salted butter
  • 1 cup of white sugar
  • 2 cups of plain flour
  • A pinch of salt

Instructions:

  1. Preheat your oven to medium heat (around 300°F). Line a wide baking tray with baking paper, so that it overhands the tray slightly. This will make it easier to lift your shortbreads out later.
  2. In a large mixing bowl, mix your butter and sugar together. Continue with this until the mixture is fluffy and light. This process will be made easier if your butter is softened beforehand, and if you have a mixer available this will speed the process up.
  3. In a separate bowl, mix the flour and salt together. Once combined, add it gradually to your butter-sugar mixture, and keep mixing until it is all combined. If you overmix, however, it risks making the shortbread tough, so be careful with this.
  4. Transfer your combined mixture to the baking tray. Smooth it down and level it with a spatula. Use a knife to score the dough into shortbread-sized chunks.
  5. Bake in the oven for around 30 minutes. The shortbread’s center should be firm but still pale.
  6. Allow them to cool for about 10 minutes before lifting them from the baking paper and cutting them into your preferred sizes. They go great with tea, but you can also dip them in melted chocolate. Enjoy!

Have you ever wondered what it would be like to make your own butter from scratch? Well, wonder no more! We’re going to take you on a butter-making adventure right in the comfort of your own kitchen. Get ready to churn, whip, and savor the creamy goodness of homemade butter like never before.

Gather Your Ingredients

You’ll need just one ingredient: heavy cream. Opt for high-quality cream to ensure a rich and flavorful result. You can also add a pinch of salt to enhance the taste, but that’s optional.

Start Churning

Pour the heavy cream into a mixing bowl and grab your whisk or mixer. Begin whisking or beating the cream on medium-high speed. As you whisk, you’ll notice some magical transformation taking place. The cream will gradually thicken and change its consistency.

Watch It Transform

Keep whisking or beating the cream until it reaches a whipped cream-like consistency. But don’t stop there! Keep going, and you’ll see the whipped cream breaking down further, separating into butter and buttermilk.

Separate the Butter and Buttermilk

Once the butter has formed and separated from the liquid, strain the mixture through a fine-mesh sieve or cheesecloth to separate the butter and buttermilk. Squeeze out as much buttermilk as possible and save it for later use in baking or cooking.

Rinse and Squeeze

To ensure your butter is free from excess buttermilk, rinse it under cold water while gently kneading and squeezing it. This rinsing process helps remove any remaining buttermilk and prevents the butter from spoiling quickly. Pat the butter dry with a clean towel.

Add a Personal Touch

Now that you have your homemade butter, it’s time to get creative! You can keep it simple and enjoy the pure taste of fresh butter, or you can add some flavorings to make it extra special. Try mixing in herbs, spices, or even a drizzle of honey for a touch of sweetness.

Store and Savor

Transfer your homemade butter into a container or shape it into a log using wax paper or plastic wrap. Store it in the refrigerator to maintain its freshness. Use it to spread on warm toast, melt over steamed veggies, or incorporate it into your favorite recipes.

Butter is a staple ingredient in most baking recipes, especially cakes and muffins. But what happens if you run out of butter or you are a vegan—what alternatives can you use that will give your dish a great texture and delicious taste? There are actually plenty to try, and here are three of the best.

Oil

Coconut oil and olive oil are great butter alternatives when it comes to baking. They will give cakes a moist texture and you won’t need to take time to melt anything. The olive oil should be high quality, so it doesn’t overpower other flavors. And beware of coconut oil, and the taste of coconut tens to flavor the food slightly.

Applesauce

When cooking with applesauce, try to use the unsweetened variety. Use the same ratio 1:1 for butter to applesauce in a recipe and you won’t taste the difference.

Banana

Mashed bananas work just as well as butter—they’ll give your cake a denser texture and add some fruity flavor. Just convert the amount of butter to the number of mashed bananas equally and you will have yourself a delicious muffin.

If you thought butter was supposed to just be spread on toast or used in baking, you’re about to have your mind blown. Chef Thomas Straker, born in Herefordshire, England, is showing us all of the possibilities that butter has to offer, with his series that he calls “All Things Butter.”

Thomas cooks with the mindset that simple is better. His recipes on his website, Instagram, and TikTok are easy to follow and use seasonal ingredients. And while his butter recipes also follow his cooking values, to us, they seem far from simple—they’re extraordinary.

Butter seems like the go-to ingredient when it comes to frying, but there is another fat that shouldn’t be entirely overlooked. Most Indian dishes rely on ghee which is a clarified version of butter. But what’s the actual difference between the two and which is better for you?

How are They Made?

Butter is made by churning milk or cream for long enough that the fat separates from the liquid. The solid part is what we know as butter, while the rest is buttermilk. With ghee, the butter is heated to cause the separation, and the milk solids are discarded. The remaining butterfat is thus devoid of any milk proteins, making ghee lactose-free and able to be stored at room temperature.

How Hot Can They Go?

Butter has a smoking point of around 350°F, whereas ghee can go much higher. The smoke point for ghee is only 485°F, making it the better choice when cooking at very high temperatures. When it comes to baking, however, butter may be superior as it has a sweeter flavor.

Nutritional Info

Ghee and butter are almost identical, as far as nutrients are concerned. Both contain Vitamin A, Vitamin E, Vitamin K, and conjugated linoleic acid (CLA). However, due to ghee being pure fat, it possesses slightly more butaric acid which has been shown to reduce inflammation in the gut.

Margarine and butter are two popular spreads used in cooking and baking that look pretty much the same, but that doesn’t make them identical. There are several differences between these two spreads that have a major impact on their healthy properties and culinary uses. Here are a few of the differences.

Fat Content

When it comes to the main difference between these two spreads, it’s all about the fat involved. Butter contains saturated fats that help it keep its shape, while margarine is made with vegetable oil, and contains a higher level of healthy fats. Unfortunately, they can both contain trans fats and that’s why it’s best to consume them in moderation.

Healthier Option?

Margarine and butter both have their downsides when it comes to their healthy properties due to their fat content. If you want to keep your margarine consumption on the healthy side, try to find the trans-fat-free version, and consider buying a vegan version without dairy milk when it comes to butter.

Cooking Uses

Margarine and butter have a pretty similar function and they’re both popular spreads, but there’s a slight difference in their texture. Margarine is more commonly used in baking and can give your baked goods a softer texture because it has a higher water content than butter.

Thomas started his butter series in April of 2022, on his TikTok. Every video starts the same way, with a base of creamy looking butter, to which he adds lots of fresh and interesting ingredients—anything from garlic and lime, to more unique things, like bone marrow, anchovies, and ‘njuda.

He throws the ingredients into a bowl and mixes them together with a hand held whisk. Then after a huge fingerfull of butter to taste test, Thomas shows us just what recipe would go great with this newly concocted butter.
