The simple but very delicious all-butter shortbread is an often-underrated biscuit. It might not have the glamor of other sweet treats, but when made well and with all-butter, it is one of the best winter snacks out there. Here is a recipe for an all-butter shortbread that will melt in the mouth.

Ingredients:

  • 1 cup of salted butter
  • 1 cup of white sugar
  • 2 cups of plain flour
  • A pinch of salt

Instructions:

  1. Preheat your oven to medium heat (around 300°F). Line a wide baking tray with baking paper, so that it overhands the tray slightly. This will make it easier to lift your shortbreads out later.
  2. In a large mixing bowl, mix your butter and sugar together. Continue with this until the mixture is fluffy and light. This process will be made easier if your butter is softened beforehand, and if you have a mixer available this will speed the process up.
  3. In a separate bowl, mix the flour and salt together. Once combined, add it gradually to your butter-sugar mixture, and keep mixing until it is all combined. If you overmix, however, it risks making the shortbread tough, so be careful with this.
  4. Transfer your combined mixture to the baking tray. Smooth it down and level it with a spatula. Use a knife to score the dough into shortbread-sized chunks.
  5. Bake in the oven for around 30 minutes. The shortbread’s center should be firm but still pale.
  6. Allow them to cool for about 10 minutes before lifting them from the baking paper and cutting them into your preferred sizes. They go great with tea, but you can also dip them in melted chocolate. Enjoy!
