We love cooking with wine as much as the next guy, and as the old cliche goes, sometimes we even put it in the food (ba dum tss!) All jokes aside, vino is good for so much more than just getting a buzz on after a long day. A small splash can take almost any recipe from good to great, enhancing flavor and aroma as well as tenderizing proteins. Having said that, it’s essential to choose the right variety for your dish and add it at the proper time. Read on to learn more.

Quality & Type

Potentially the most fundamental rule of cooking with wine is to never add a wine to your food that you wouldn’t drink on its own. The flavors will intensify as the alcohol evaporates, so choose a high-quality wine in a variety that will complement the rest of your dish. For example, dry white wines like Sauvignon Blanc work well in light dishes like seafood and risotto, while bold reds such as Merlot are more suited to hearty sauces.

Alcohol Content

You’ve probably heard that alcohol, whether it be wine or any other spirit, “cooks off”, but this is actually only partly true. Alcohol does evaporate when heated to 173 degrees Fahrenheit and above, but studies have shown that it takes about 3 hours to remove any and all traces—far too long for the majority of recipes. This isn’t necessarily a reason not to use it, but it is something to be aware of depending on who you’re cooking for.

Timing

The point at which you add wine to a recipe can make a big difference in how it turns out. Added too early, delicate wines may lose their subtlety, while any wine added too late can leave your dish with a harsh, bitter taste. In general, the best rule of thumb is to add wine early in the cooking process to deglaze the pan.

It’s the season to be merry, but what you don’t want is a raging hangover the next morning. The best way to help that is by eating the correct food beforehand. It’s important to give your body a chance to recover quickly, rehydrate, and balance your blood sugar levels. Here are four foods to eat before you go out drinking.

Healthy Fats

Fatty foods stay in your stomach for longer which helps slow down the absorption of alcohol in your blood, but that doesn’t mean you should eat a lot of fried foods. Try to eat more healthy fats like salmon and avocados to feel full and ward off the hangover.

Foods That Support the Liver

Adding some turmeric, cinnamon, kale, lemon, and beetroot to your meal is a great way to help support your liver and if you will be drinking alcohol make sure to eat plenty of these.

Slow Releasing Carbohydrates

If you want to keep balanced blood sugar levels while you are drinking, avoid salty snacks as they can dehydrate you, and eat more slow-releasing carbohydrates. Olives, nuts, bread, and chickpea dip are all great for slowing down the absorption of alcohol and easing your hangover the next day.

Fruit

If you do wake up with a slight hangover then fruit is your best friend, it will hydrate you and replace the vitamins you lost. A smoothie with bananas will restore your electrolytes and fruits like watermelon will hydrate you, so throw it all into a blender and enjoy.

Alcohol is much more than just a form of entertainment or a way to relax after a stressful day; it’s also a culinary staple used to tenderize meat and provide flavor to a wide variety of dishes. However, whether for health, religious, or personal reasons, some people prefer to avoid foods containing booze, and it’s important to note that food needs to be cooked for about three hours for all traces of alcohol to evaporate completely. Even longer cooking times aren’t necessarily a guarantee, and as three hours would be too much for most dishes, it’s usually easier to forgo alcohol and replace it with another ingredient. Here are a few of the best alternatives.

Vinegar & Fruit Juices

When a recipe calls for white wine or vermouth, try using white a few tablespoons of wine vinegar or a mixture of apple and lemon juice instead. Add a little at a time, tasting as you go until you reach a level of acidity close to what alcohol would provide. For a red wine replacement, a splash of balsamic vinegar and some grape or pomegranate juice can infuse your dishes with depth and complexity, though as they are quite sweet, they should also be added in small increments.

Broths & Stocks

For stews, sauces, and marinades that call for wine or beer, vegetable or mushroom broth are easy non-alcoholic alternatives that can provide a similar richness and depth of flavor. If your dish contains meat and you’re looking for something a little heartier, beef or chicken stock should also work well and will give your dish a nice savory quality.

Non-Alcoholic Extracts

Vanilla extract is used to provide flavor in a wide variety of desserts, but many store-bought versions are made using vodka or other grain alcohols, so be sure to check labels and search for a brand that uses glycerin instead. If you’re making a dessert such as tiramisu or bananas foster where alcohol is a key ingredient, experiment with fruit juices or non-alcoholic extracts to achieve your desired flavor sans booze.

We have to be upfront: you’ve probably been drinking tequila the wrong way your entire life. It goes with lemon and salt, we hear you say. And while that may be true, it is the glass itself that is doing the beverage a disservice.

Despite tequila being known as somewhat of a party drink, the spirit is actually quite complex in its flavors. Made from agave, it can possess sweet, floral notes that just cannot be appreciated in a shot glass.

When thrown back, the way tequila typically is, it comes across as bitter and harsh with a burn from the alcohol.

The experience is quite different, however, when sipped through a flute.

The glassware is usually associated with champagne, but does a pretty good job with tequila, too. Its design allows the aromas of the drink to float to the top, so you can smell them as you taste. As it has a capacity for 6 ounces of liquid, a flute gives the spirit enough room to aerate and bring softer, more palatable flavors to the fore.

Using a stemmed glass also allows you to slow down so you can appreciate the look, smell, taste, and feel of the drink.

From lounging by the pool to relaxing on the beach, there are few things that hot summer days call for more than seasonal fruit – especially if that fruit is part of a cocktail. While we’ll never say no to a frozen margarita, and piña coladas certainly have their place, these drinks require a lot of ingredients and can be messy to prepare. Fortunately, we’ve discovered a few easy ways to combine our favorite summer fruits with booze that don’t even require breaking out the blender. If you’re looking for fun summer drink ideas, read on to learn more about how to make them for yourself.

Champagne Sugar Grapes

Take a bunch of grapes and poke each one once with a toothpick. Soak for about 8 hours in a bowl of sparkling wine, then roll them in sugar before serving. Sure, there may be something a bit questionable about soaking grapes in what is essentially grape juice, but we promise that they make for an incredible combination. Just don’t think about it too much.

Vodka Watermelon

Cut a hole the size of the vodka bottle cap into a seedless watermelon, then poke a skewer into the hole to make sure you’ve completely cut through the rind. Carefully tip the vodka bottle into the hole, making sure that it fits snugly enough to stay upright. Leave it to drain into the watermelon for at least 20 minutes or until the bottle is emptied. Chill before serving, and you’ve got a party on a platter.

Tequila Pineapple

Cut a pineapple into spears and remove the rind. Place the spears in a bowl or tupperware container, then pour in your choice of tequila until all of the pineapple is completely covered. Refrigerate for 4-6 hours before serving. You can also experiment with using different types of liquor depending on your preferences. We find Malibu Rum also works well and adds a refreshing, tropical taste that complements the pineapple perfectly.

Baileys Irish Cream is a delicious cream liqueur made of cream, cocoa, and Irish whiskey. It’s sweet and you can drink it on its own with a few ice cubes, or use it in various recipes. Mixing Baileys with food or drinks is always a good idea, and here are our favorite combinations.

Baileys Honey Espresso Affogato

Put a teaspoon of stracciatella flavored ice cream in a bowl, top with some chocolate syrup and honey, then repeat. Pour 50 milliliters of Baileys and two shots of espresso over the ice cream. Enjoy!

Baileys Coffee

This simple yet effective recipe is a great way to turn your regular coffee into an exciting drink, perfect for fall afternoons. Simply add a shot of Baileys to your favorite hot coffee. Optionally, you can top the drink with some whipped cream.

Baileys London Fog

Did you know that you can add Baileys to your tea, too? Make London fog, a beverage with Earl Gray tea, milk, and vanilla, and add some Baileys to it.

You can also come up with your own combinations that use Baileys, just remember that it shouldn’t be used with citrus or citric acid, so ingredients like juice and soda are not a good idea.

What do you get when you combine a little yellow box of waffles and rum flavored with cinnamon and nutmeg? Eggo Nog! That’s right, the iconic frozen waffle maker we all grew up with has partnered with the Tennessee-based Sugarlands Distilling Co. to create a delicious holiday-themed cocktail that’s sure to be a hit at any seasonal party.

The product is the newest addition to Sugarlands’ line of Appalachian Sippin’ Creams, named for their cream base, and features all of the toasty spiced-eggnog flavors we know and love. Distillers at Sugarlands worked hard to create a beverage that pairs perfectly with Eggo’s classic Thick & Fluffy waffles so grownups could have a little extra something to enjoy throughout the holiday season.

You can certainly enjoy Eggo Nog on its own (and believe us, we will be!) but if you prefer to mix up something with a little more pizazz, there are 10 recipes for drinks that incorporate the liquor on the Sugarlands’ website (21+). Think Peppermint White Russian, Eggo Nog Martini, and an original creation called “Christmas Breakfast,” which also includes a shot of the brand’s Maple Bacon Moonshine.

Eggo Nog is available at liquor stores around the country. Find a store near you at Sugarlands’ website here
