Cheesecake is a dessert loved by everyone, regardless of age. It is typically made with cheese and milk, which is a problem for vegans. Today, we present you with a recipe for a vegan cheesecake that is so delicious that you might never want to try another one!
Ingredients:
Crust
- 1/2 cup pistachios (or other nuts/seeds)
- 3 dates, pitted
Filling
- 1 cup cashews, soaked for 2 hours or longer
- 2 teaspoons matcha powder
- 1 tablespoon coconut oil
- 2 tablespoons pure maple syrup
- 1/2 lime, juiced
- 1/4 cup non-dairy milk
Instructions:
For the crust:
- Process every ingredient for the crust in a food processor until you get fine crumbles.
- Take a 4-inch pan and put parchment paper in it. Pour the mixture and let it cool in the freezer. In the meanwhile, start with preparations for the filing.
For the filling:
- Put the cashews (rinsed and drained) along with the other ingredients in a blender or a food processor until they’re smooth and homogeneous.
- When the crust is well cooled, put the filling on top of it. Put it back in the freezer for another 2 hours so that the fill can properly solidify.
