Ingredients
- 2 large potatoes, peeled and boiled
- 1/2 cup grated cheese
- 2 tablespoons chopped fresh herbs (parsley, chives, or cilantro)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 egg, beaten
- 1 cup breadcrumbs
- Oil for frying
- Optional fillings (bacon, ham, cheese, or jalapeños)
Instructions
- Once your potatoes are boiled and cooled, mash them until smooth.
- Add the grated cheese, chopped herbs, garlic powder, salt, and pepper to the mashed potatoes. Mix until well combined. Add any fillings, if you like.
- Roll the potato mixture into balls, about the size of a golf ball.
- Dip each potato ball into the beaten egg. Next, roll the egg-coated ball in the breadcrumbs until it’s completely covered.
- Place the coated balls on a plate and chill in the refrigerator for about 15-20 minutes to set.
- Heat oil in a deep fryer or a deep pan to 375°F. Carefully add the potato balls to the hot oil in batches.
- Fry until they are golden brown and crispy, about 2-4 minutes.
