Ingredients:
- 2 pounds boneless and skinless chicken thighs
- 1/4 cup chili-garlic sauce
- 1/4 cup fresh lime juice
- 1/4 cup light brown sugar
- 3/4 cup pineapple juice
- 1/4 cup fresh cilantro leaves
- 1 tablespoon grated ginger
- 1 sliced pineapple
- 1 can coconut milk
- 2 tablespoons soy sauce
- 3 cloves garlic
Instructions:
- Pour coconut milk, chili-garlic sauce, lime juice, brown sugar, garlic, ginger, pineapple juice, and soy sauce. Whisk together and add the chicken. Toss to coat. Refrigerate the mixture for at least 20 minutes.
