Ingredients:
- 6 king oyster mushrooms
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon chili powder
- 2 tablespoons olive oil
- 2 brioche buns
- 3 tablespoons BBQ sauce
Instructions:
- Preheat oven to 375°F. Shred the mushrooms into 1/2-inch pieces and spread them evenly onto a baking sheet. Add chili powder, garlic powder, paprika, and salt and drizzle in olive oil. Toss the mixture to coat evenly.
- Bake the mushrooms for about 20 minutes, until they’re slightly golden.
- Drizzle the mixture in BBQ sauce before baking for a further 5 minutes, until the sauce is warm.
- Spread mayonnaise on the top brioche buns and pile the mushrooms on the bottom buns before closing the sandwiches.
