Ingredients:
- 2 boneless and skinless Mahi Mahi fillets
- 1/4 cup of honey
- Juice of one lime
- Lemon zest
- Bunch of fresh cilantro
- 1 package of fresh strawberries, finely diced
- 1/2 red onion finely diced
- 1/2 lime juiced
- 1/2 seeded jalapeño finely diced
- Salt and Pepper to taste
Instructions:
- In a small bowl, wish together wet ingredients and add cilantro
- Pour wet ingredients over the fish and let it marinate in the fridge for 2 hours if you have the time
- Heat olive oil or avocado oil on a non stick grill pan, and cook your fillets fully through on both sides
- Prepare your salsa by combining the strawberries, jalepenos, onion, lime juice, and salt and pepper and mix
- Plate your fish with some rice and sprinkle the strawberry salsa and garnish with more cilantro
