Carrot Potage is the Healthy Comfort Food You Need This Winter

Carrots are one of the most popular root veggies for a pretty good reason—they’re delicious, crunchy, and come with more healthy properties than we can count. They’re also extremely versatile and can be used as an add-in in many healthy dishes, including carrot potage.

Warm and creamy, this potage is the ultimate comfort food that you have to add to your menu this winter. In addition to being delicious and healthy, this dish is also super-easy to make and all you need to get it done is an immersion blender and a couple of basic ingredients.

Ingredients:

  • 600 grams potatoes
  • 450 grams carrots
  • 50 milliliters sour cream
  • 1 onion
  • 4 garlic cloves
  • parsley leaves
  • salt and pepper

Instructions:

  1. Cut the potatoes, carrots, onions, and garlic into cubes, and place them in a large pot.
  2. Pour two liters of water in the pot with the vegetables, add a dash of salt and pepper and let them cook at low heat for about 40 minutes. Pour more water in along the way if necessary.
  3. Once the veggies are cooked, use the immersion blender to get a creamy potage.
  4. After blending your ingredients, garnish your potage with parsley leaves and sour cream.
