What Should You Be Baking Your Cookies On?

If you are an avid baker, you know that what you use to bake your cookies on has an impact on how well they turn out. Which gets the best results—a baking paper, a silicone mat, or parchment paper, which will give you the best results?

After trying the same recipe of chocolate chip cookies on all three, here is what we discovered.

Baking Sheet Pan

We used a textured sheet pan with a non-stick coating to promote even baking. The cookies needed 5 minutes more in the oven but came out totally perfect gooey on the inside and crispy on the outside. There is a little more clean up but it is worth it.

Silicone Baking Mat

If you want a non-stick surface and easy clean up then the silicone mat is a really great option. This required the cookies to bake for 6 extra minutes and they were a little uneven due to the lack of airflow from the mat. The middle was chewy and the general look was a little flatter.

Parchment Paper

The classic method of lining your baking sheets with parchment paper means no actual cleanup and a nonstick surface. The cookies took five minutes of extra baking time and they were a little crispier than the others. The cookies did stick to the sheet a little bit too.

In conclusion, the best method is the textured nonstick sheet pan—a little more clean up but perfect cookies every time.
