Italian Vegetable Soup
The striking red color of this soup makes it clear tomatoes are one of its main ingredients. You’ll also need some chickpeas, vegan meatballs, and Italian seasoning to make it perfect. If you want to give your soup some extra spice, using red pepper flakes is the way to go.

If you’re wondering how this delicious soup got its lively, green color—it looks the way it does because it contains broccoli and avocado. To make it even healthier and vitamin-rich, add some chopped carrots, bell peppers, and jalapeños to the mix.

This allows sulforaphane to be created, which is the component that contributes to all the amazing health benefits. 💚💚 Soup Ingredients 🌱3 carrots chopped depending on size 🌱2 celery ribs chopped 🌱3 cloves of garlic minced 🌱1 sweet onion quartered 🌱4 cups of broccoli cut into bite size pieces 🌱1 cup of greens 🌱1, 15 oz can chickpeas drained and rinsed 🌱1 avocado pitted and chopped 🌱6 cups of vegetable broth or stock 🌱1/4 to 1/2 cup nutritional yeast 🌱2 teaspoon of salt or to taste, 1/2 tsp red pepper Roasted Chickpea Ingredients 🌱1, 15oz can chickpeas rinsed and drained 🌱1 teaspoon of curry powder 🌱1 teaspoon of olive oil 🌱½ teaspoon of turmeric 🌱Salt to taste Preparation ✔️Preheat an oven to 400 degrees. Place chickpeas on parchment lined sheet. Add oil and salt. Mix with hands. Bake for 25-30 min. Once done let cool, toss with spices. ✔️Heat large soup pot on medium heat. Dry sauté onion. Use a bit of the veg broth if needed. After 5 min, add garlic, carrots and celery. Cook a couple of minutes, stirring frequently. Add broccoli, chickpeas (not roasted ones), veg broth,red pepper flakes and salt to taste (1-2 tsp)Simmer for 8-10 minutes or until vegetables soften. About 1 min from being done add avocado, greens and nutritional yeast. Stir.✔️In batches,transfer soup to blender,blend until smooth. Lentil Coconut Stew
If you’re in the mood for a creamier, thicker, and more filling meal, stews are a great alternative to soups. Fans of lentils have to try this one, and the sundried tomatoes it contains will make the whole thing even better. Unless you’re a fan of spicy foods, go easy on turmeric, curry, and red pepper flakes.

With the Fall vibes, sharing this warm, comforting, Lentil Coconut Stew. Recipe by @thelittlecityseed 🍁🧡 The flavor profile is amazing with ginger, garlic, turmeric, curry, sun dried tomato and coconut. Who’s hungry!? Ingredients 🌱1 cup of dried red lentils rinsed 🌱1 sweet onion diced 🌱4 cloves of garlic minced 🌱2-3 inch piece of ginger, grated and minced 🌱1, 18 oz jar/can of high quality crushed tomatoes 🌱1 can of coconut milk (not light) 🌱¼ cup of sundried tomatoes chopped 🌱3 teaspoon of turmeric 🌱1 teaspoon of curry 🌱½ teaspoon of red pepper flakes 🌱1 teaspoon of salt or to taste 🌱3 ½ to 4 ½ cups of water – use 3 ½ if you like it thicker Preparation ✔️Heat a large pot over medium heat, dry saute the onion for 4-5 minutes, stirring frequently. You can use a bit of vegetable broth or water if it begins to stick. Next add the garlic, ginger and spices and cook for another minute or until it becomes fragrant, continuing to stir. ✔️Add the crushed tomatoes and lentils, stir to combine and cook for a couple more minutes. Add the water and stir. Bring the stew to boil and then reduce to a gentle simmer and cook, stirring occasionally. ✔️At about the 20 minute mark or when soup begins to thicken add the coconut milk and sundried tomatoes.
