Try This Perfect, Flavorful Fall Salad from The Café Sucre Farine

Just because summer is over doesn’t mean we should give up on eating fresh and flavorful salads. This perfect fall salad recipe—filled with healthy seasonal ingredients—is a must-try in case you’re already missing all the fresh summer produce.

Ingredients

  • 8 cups arugula or other greens
  • 2 tablespoons chopped fresh mint — optional
  • 3 medium clementines peeled, halved and sliced 1/4 inch thick
  • 1 cup red grapes, halved
  • ½ small red onion, thinly sliced
  • ½ cup chickpeas
  • ½ cup salted roasted pistachios
  • ¼ cup pomegranate arils or seeds
  • Pumpkin Maple Vinaigrette

Instructions

  1. In a medium-size bowl, mix salad greens, mint and 2 tablespoons of the Pumpkin Maple Vinaigrette, then toss gently.
  2. Add clementines, red grapes, red onion, and chickpeas, then toss again.
  3. Transfer salad to a serving platter and sprinkle with more dressing. Decorate with pomegranate arils and pistachios and serve with dressing.
