These herbed mashed potatoes are a delicious and wholesome addition to your dinner table this fall. Just follow these simple steps, and you can be making mashed potato like a pro in no time.

Ingredients

To make this mashed potato recipe, you will need 4 lb (about 8) golden potatoes—peeled and quartered—salt, double cream, unsalted butter, 2 sprigs parsley, 8 sprigs thyme, 1 bay leaf, 6 black peppercorns, and grated nutmeg.

Boil Potatoes

Cover the chopped potatoes in cold water and bring to the boil. Add 2 teaspoons of salt, and then simmer for 15-18 minutes, or until tender. Drain the cooked potatoes and return them to the pot.

Make Creamy Herb Mix

While the potatoes are cooking, you should start preparing the creamy herb mix. Put the cream, butter, thyme, parsley, bay leaf, and peppercorns in a small saucepan and then bring them to the boil. Simmer for 3 minutes and then remove from heat.

Combine and Serve

When the creamy herb mix has combined into a sauce, strain the cream mixture into the potato pot. Add 3/4 teaspoon salt and mash together. Mash the mixture to your desired consistency. If you prefer creamier potatoes, you can add a dash of extra cream or milk to the mixture. When done, sprinkle with nutmeg and serve.
