I like to try and change my environment (maybe outside), meditate a bit, find something to smile about (thanks Sprout!), and listen to happy songs! 😌 This helps me reset my mind in a more positive filter! 🙌🏻🌟 . • I hope you all have a wonderful Tuesday filled with many smiles! ☺️❤️. ••• Deets👇🏻 . 👉🏻 Cut sweet potato long ways and broil on high for 5 min, flip, and broil for 5 min more. 🍠 . 👉🏻 While sweet potato toasties cook, melt 2 tbsp ghee in pan. Gently add mahi-mahi and wait to flip until crispy on bottom. Cook on both sides until crispy! I cut my fillet in half. I covered with my @zulay_kitchen splatter screen so I don’t burn my hands from the hot ghee! 🐟 . 👉🏻 Once crispy set aside and use the same pan to cook the red onions with a splash of coconut aminos. Sauté kale when the onions are basically done cooking. 💥. . 👉🏻 Topped this round of sweet potato toasties with mashed avo🥑, the sautéed onions in @bragglivefoodproducts coconut aminos, crispy @naturesgreens kale, Valentina’s hot sauce, ETBTB seasoning, the crispayyy mahi-mahi, and another sweet potato toast!😋 . 👉🏻 ENJOY! 💥
