BROWN BUTTER DUBAI CHOCOLATE CHIP COOKIES Can you even 🥹 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (makes 16-18 cookies): Brown Butter Chocolate Chip Cookies: – 1 cup + 2 tbsp (258g) salted butter – 1 cup (230g) brown sugar – 1/2 cup (110g) granulated sugar – 2 eggs, at room temp – 2 tbsp (30ml) heavy cream, room temp (sub: milk of choice) – 2 tsp (8g) vanilla extract – 2 3/4 cups (350g) all-purpose flour @Bob’s Red Mill – 1 tsp (6g) baking soda – 1 tsp (4g) baking powder – 1/4 tsp (2g) salt – 1 1/2 cups (300g) chocolate chips of choice (I used semi-sweet) @Nestle Toll House Filling: – 1 cup (90g) kataifi (shredded phyllo dough) – 3/4 cup (200g) pistachio butter or cream – 1 tbsp (14g) salted butter, for toasting kataifi Instructions: Start by browning the butter. Add the butter to a saucepan over medium-high heat. Allow to melt and slightly brown (~5 minutes). Remove from the heat and immediately pour into a large bowl. Allow to cool slightly. In a medium bowl whisk together the flour, baking soda, and baking powder. Set aside. Once the brown butter has cooled, add both sugars and whisk. Add in the eggs and whisk until well combined and lighter in color. Then, add the heavy cream and vanilla. Whisk to combine. Add the dry ingredients to the wet, and gently fold until fully incorporated. Fold in the chocolate chips. Cover the bowl with plastic wrap and place in the fridge to chill for at least 1-2 hours (ideally 2-4 hours) or up to 24 hours. I let mine sit in the fridge overnight! Prepare the filling. In a large pan over medium heat, melt the 1 tbsp of butter and add the shredded kataifi. Toast the kataifi until golden and crispy, stirring frequently. Transfer to a bowl and let cool. Once cooled, add the pistachio butter and mix until well combined. Line a baking sheet with parchment or wax paper. Scoop and portion out the filling into 2 tsp sized balls, placing onto the baking sheet. Chill in the fridge or freezer for at least 1 hour. Once ready to bake, preheat the oven to 375F. Line 2 baking sheets with parchment paper. Remove the dough from the fridge and allow to sit at room temperature for 20-25 minutes to make it easier to scoop. If it needs longer, let it sit longer! Use a large cookie scoop (3 tbsp) to scoop (pack the dough into the scoop with your hands) the dough out. Flatten each ball with your hands. Place the filling portions into the center and shape the dough around it to form cookie balls, adding a little more dough if needed to ensure the filling is completely enclosed. Place the cookie dough balls on the prepared baking sheets, spacing at least 2” apart. Bake at 375F for 14-16 minutes, until lightly golden and the edges are set. Remove the cookies from the oven and immediately shape them with a bowl or round cookie cutter if desired. Let cool on the baking sheet for 5 minutes before transferring to a wire cooling rack. Serve warm with a sprinkle of flaky sea salt and milk, if desired. There are countless variations on TikTok, but we particularly liked the one from @sohonutrition. She spreads Dubai chocolate’s kataifi and pistachio filling on a pancake and adds a drizzle of melted chocolate. She places another pancake on top and repeats the process several times. The final result is mouthwatering.
VIRAL DUBAI CHOCOLATE PANCAKES 🥞🍫🍓 Honestly one of the best things I’ve ever tasted 😭🤣 Make sure to save for your next pancake recipe because these are not to be slept on☝🏼 •Macros and calories have not been counted •This will make a few servings as it’s very heavy and indulgent Pistachio filling (makes 4-5 portions): -Knafeh or Kataifi filo (about quarter/half of a pack) -20g of butter -4 tbsp of pistachio cream -1 tbsp of tahini Pancake batter (5 small pancakes): -60g of plain flour -1 tsp of baking powder -1 tsp of sweetener (I use Stevia) -80ml of low fat milk -1 egg -1 tsp of butter & use oil spray after Toppings: -Strawberries -Melted chocolate Method: 1. Chop up the filo pastry. Heat a pan on medium heat and add butter. Let it melt then add in the filo pastry. 2. Fry until it becomes golden brown and crispy. 3. Add flour, baking powder, sweetener, milk and egg to a bowl. Whisk until smooth. 4. Heat a pan on medium heat and add the butter. Let it melt and heat up. Spoon in some pancake batter. Fry until bubbles form then flip over and fry for another 1-2 minutes. Repeat the process until the batter is gone (I got 5 small pancakes). 5. Assemble each pancake with some pistachio filling and a drizzle of melted chocolate. Top with strawberries.
