This Spinach and Tomato Omelette Makes a Perfect Breakfast

Who doesn’t love an omelette for breakfast in the morning?

Omelettes are a simple and easy breakfast food that take nearly no time to prepare. This recipe incorporates two delicious vegetables, spinach and tomatoes, that come together to make the perfect healthy breakfast.

Ingredients:

  • 4 medium eggs
  • 1 medium tomato
  • 1/2 cup fresh baby spinach
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. First, crack your eggs into a bowl. Add the garlic powder and as much salt and pepper as you’d like to the bowl. Whisk and beat the eggs.
  2. Heat up a small pan containing half of your olive oil. Dice the tomato into small pieces. Gently fry the diced tomato over medium heat for a couple of minutes. Remove the tomato and set aside.
  3. In a medium-sized skillet on medium-high heat with olive oil, pour the beaten eggs into a pan. Allow them to cook for 2 minutes, or until slightly firm.
  4. Add the tomato and spinach on top of the eggs in the pan. Allow to cook for 2-3 minutes. Make sure that the spinach has wilted.
  5. Fold one side of the omelette on top of the other, and you’re ready to enjoy this delicious omelette!
