Do you ever have just a few scoops of rice left—not enough for another serving, but too much to throw away? This take on Thai sticky rice-based desserts may be your answer. The Thai dessert of mango atop coconut-milk-soaked sticky rice is a delicious classic, but you can do a version of this with any rice if you wish.

Getting Started

Start with your leftover rice. This will work best with stickier rice like sushi rice if not actual sticky rice. However, you can use any rice you have lying around. If you are using leftover rice that’s not sticky, you may wish to cook the rice with water until it becomes a bit pastier.

Next, pour in some coconut cream and mix it up with the warm rice. If you don’t have coconut cream, regular cream will likely do the trick as well. Then, add a spoonful of honey and mix that in for some light sweetness.

For toppings, something fresh, sweet, and refreshing is best. You can use mango like the original, or any kind of fresh fruit you have on hand. Alternately, if you have any sweet red bean paste, this is also a delicious topping. Sprinkle sesame seeds on top for an extra crunch. Voila!

Whether for a light meal or a healthy snack, Thai spring rolls are a great way to add freshness to your diet. There are lots of yummy vegetables you can add, some more common than others. Here are some fresh and some cooked options to try out.

Fresh

For fresh vegetables, the most common found in spring rolls are shredded cabbage, shredded carrots, and cilantro. For some added crispness, try adding thinly-sliced cucumber, sliced bell pepper, and a few mint leaves. For a kick, slice some red onions or even a bit of jalapeno if you like spice. Or, take your inspiration from tacos and pickle the red onions to add extra flavor.

Cooked

You can really add any cooked vegetable you like to a spring roll, but it’s a good idea to pay attention to what can most easily be cut into strips. Remember that you will have to roll the filling into a rice paper later, so you want to make that process as easy as possible. Some great vegetables to try frying up with spices are cabbage (again, yes) and sweet potato.

These can both be cut into strips, so they are great from a flavor and a structural standpoint. Try seasoning the cabbage with sesame oil, chili oil, and soy sauce and frying it up. This delicious Thai soup is vegan, healthy, and can be made quickly in only one pot!

Ingredients:

  • 1 1/2 tablespoons coconut oil
  • 1/2 yellow onion, thinly sliced
  • 2 tablespoons fresh ginger, finely minced
  • 2 stalks lemon grass cut lengthwise and tied up with food-grade twine
  • 1 red chili pepper, minced (option to omit if sensitive to spice)
  • 3 cloves fresh garlic, minced
  • 2 tablespoons red curry paste
  • 5 cups vegetable broth
  • 1 cup coconut milk
  • 2 limes, peeled and juiced
  • 2 large tomatoes, diced
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons maple syrup or brown sugar

Instructions:

  1. Heat a large pot over medium heat and add the coconut oil.
  2. Add the lemongrass, garlic, onions, chili peppers, ginger, and red curry paste. Sauté for about five minutes, stirring occasionally.
  3. Add the broth, coconut milk, tomatoes, soy sauce, brown sugar/maple syrup, and the peel from one of the limes. Stir to combine and bring to a boil, then reduce the heat to a gentle simmer. Cover and let simmer for 15 minutes. Add the lime juice and simmer for 3 more minutes.

Thai curry is a great vegan dish to make that’s filling, delicious, and super healthy!

Ingredients:

  • 1 medium-sized sweet potato
  • 1/2 medium bell pepper
  • 1 medium carrot
  • 1/2 cup of frozen peas, thawed
  • 1-2 tablespoons of olive oil
  • Salt to taste
  • 2-3 tablespoons of curry paste
  • 1 can of coconut
  • 1/2 cup of vegetable broth

Instructions:

  1. First, cut the sweet potato into small dice.
  2. Heat up a pot over medium to medium-high heat and add in 1 tablespoon of olive oil.
  3. Put the sweet potatoes in there, season them with a bit of salt, and start to cook them while you prepare the other vegetables.
  4. Peel and chop the carrots into rounds or half-moons, whatever you prefer, and add them into the pot with the sweet potatoes and a little more oil if necessary. Season them with salt as well.
  5. Chop up the bell pepper into long strips and then cut them in half. Leave them to the side for later.
  6. Once the sweet potatoes and carrot have softened a bit, about 10-15 minutes, add in the red peppers and the curry paste. If you don’t want spice, add less.
  7. Cook the curry paste for 1-2 minutes, then pour in the coconut milk and broth.
  8. Simmer on low until all the veggies are soft, and then add in the peas and cook for 5 minutes more.
  9. Serve with rice and enjoy!
