This Thai-Inspired Dessert Can Help You Use Up Leftover Rice

Do you ever have just a few scoops of rice left—not enough for another serving, but too much to throw away? This take on Thai sticky rice-based desserts may be your answer. The Thai dessert of mango atop coconut-milk-soaked sticky rice is a delicious classic, but you can do a version of this with any rice if you wish.

Getting Started

Start with your leftover rice. This will work best with stickier rice like sushi rice if not actual sticky rice. However, you can use any rice you have lying around. If you are using leftover rice that’s not sticky, you may wish to cook the rice with water until it becomes a bit pastier.

Next, pour in some coconut cream and mix it up with the warm rice. If you don’t have coconut cream, regular cream will likely do the trick as well. Then, add a spoonful of honey and mix that in for some light sweetness.

For toppings, something fresh, sweet, and refreshing is best. You can use mango like the original, or any kind of fresh fruit you have on hand. Alternately, if you have any sweet red bean paste, this is also a delicious topping. Sprinkle sesame seeds on top for an extra crunch. Voila!
