This delicious Thai soup is vegan, healthy, and can be made quickly in only one pot!
Ingredients:
- 1 1/2 tablespoons coconut oil
- 1/2 yellow onion, thinly sliced
- 2 tablespoons fresh ginger, finely minced
- 2 stalks lemon grass cut lengthwise and tied up with food-grade twine
- 1 red chili pepper, minced (option to omit if sensitive to spice)
- 3 cloves fresh garlic, minced
- 2 tablespoons red curry paste
- 5 cups vegetable broth
- 1 cup coconut milk
- 2 limes, peeled and juiced
- 2 large tomatoes, diced
- 2 tablespoons soy sauce
- 1 1/2 tablespoons maple syrup or brown sugar
Instructions:
- Heat a large pot over medium heat and add the coconut oil.
- Add the lemongrass, garlic, onions, chili peppers, ginger, and red curry paste. Sauté for about five minutes, stirring occasionally.
- Add the broth, coconut milk, tomatoes, soy sauce, brown sugar/maple syrup, and the peel from one of the limes. Stir to combine and bring to a boil, then reduce the heat to a gentle simmer. Cover and let simmer for 15 minutes. Add the lime juice and simmer for 3 more minutes.
- Remove the lemongrass and lime peel with a slotted spoon.
